Title: Summer Potato Salad

Yield: 8 servings
4 lb Russet potatoes; peeled,
- in 1" chunks
1 c Mayonnaise
3 tb Apple cider vinegar
1/2 ts Garlic powder
1 1/2 ts Salt
3/4 ts Black pepper
1 c Diced celery
1/2 c Diced red onion
Place potatoes in a large pot and add enough water to
cover them. Bring to a boil over high heat and cook 15
to 20 minutes, or until fork-tender. Drain and cool.
In a large bowl, combine mayonnaise, vinegar, garlic
powder, salt, and pepper; mix well. Add potatoes,
celery, and onion to mixture and stir gently until
evenly coated.
Refrigerate for 2 hours, or until ready to serve.
