Title: Sheet Pan Balsamic Chicken & Veggies

3/4 c Italian dressing; divided
1/4 c Balsamic vinegar
4 Boned, skinned chicken
- breast halves or thighs
1/2 Head broccoli; in florets
1 c Baby carrots; halved
1/2 lg Onion; in 1/2" pieces
1 c Cherry tomatoes
1/2 ts Black pepper
Set oven @ 375┬║F/190┬║C. Coat a baking sheet with cooking
spray.
In a large, resealable plastic bag, combine 1/2 cup
Italian dressing and the balsamic vinegar; mix well. Add
chicken, seal bag, and refrigerate at least 1 hour.
When ready to cook, place remaining 1/4 cup Italian
dressing in a large bowl. Add broccoli, carrots, onion,
tomatoes, and black pepper; mix well until evenly
coated. Place on baking sheet.
Bake 15 minutes, remove from oven, and arrange chicken
between vegetables on baking sheet. Discard marinade.
Bake 20 to 25 minutes or until chicken is no longer pink
in center and vegetables are roasted.
