    Title: Tonight's One Skillet Steak
    Categories: Beef, Sauces
    Yield: 4 servings

    1/3 c A-P flour
    1 ts Salt
    1/2 ts Black pepper
    1 1/2 lb Beef cubed steak
    3 tb Oil
    1/3 c Mayonnaise
    2 tb Balsamic vinegar
    1 tb Dijon-style mustard

    In a shallow dish, combine flour, salt, and pepper; mix
    well. Completely coat cubed steak with flour mixture.

    In a large skillet, heat oil over medium-high heat and
    saute steaks for 6 to 8 minutes, until juices run clear,
    turning once. Place steaks on a covered serving platter.
    Drain excess liquid from skillet and reduce heat to low.
    In a small bowl, whisk together mayonnaise, vinegar, and
    mustard; add to skillet.

    Return cubed steaks to skillet, completely coating them
    with mayonnaise mixture. Cook 3 to 4 minutes, or until
    heated through.

    Title: Cuban Shredded Beef
    Categories: Beef, Vegetables, Chilies, Herbs
    Yield: 4 servings

    1 lg Bell pepper; chopped
    1 Yellow onion; chopped
    2 cl Garlic; chopped
    3 lb Bottom round roast
    8 oz Can tomato sauce
    2 ts Chilli spice mix
    2 ts Ground cumin
    1 ts (ea) salt & black pepper

    In a slow cooker (3-1/2 quarts or larger), combine bell
    pepper, onion, and garlic; place roast on top of
    vegetables.

    In a small bowl, combine tomato sauce, chili powder,
    cumin, salt, and black pepper; mix well and pour over
    roast. Cover and cook on high setting 7 to 8 hours, or
    until meat pulls apart with a fork.

    Turn off slow cooker and shred beef by pulling it apart
    with 2 forks. Stir beef mixture and allow to sit 5
    minutes.
