    April 13 - National Peach Cobbler Day

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Herman Peach Cobbler
    Categories: Pies, Fruits, Pastry
    Yield: 9 Servings

    1 c Herman Starter
    1/2 c Oil
    3 lg Eggs
    1/2 c Milk
    1 ts Vanilla
    2 c All-purpose flour
    1 c Sugar
    1 1/2 ts Baking powder
    1/2 ts Baking soda
    2 ts Cinnamon
    1/2 ts Salt
    6 oz Box instant pudding mix
    29 oz Can peach slices; drained

    Mix herman starter, oil, eggs, milk and vanilla. Add all
    dry ingredients. Mix well. This is a thick batter.

    Drain peaches and place in a greased 9" x 13" baking
    pan. Spoon batter over peaches. Bake at 325┬║F/165┬║C for
    30 to 40 minutes. Serve warm with half and half or
    cream.

    Title: Fresh Southern Peach Cobbler
    Categories: Fruits, Desserts, Pastry
    Yield: 4 Servings

    8 Fresh peaches; peel, stone
    - slice in thin wedges
    1/4 c White sugar
    1/4 c Brown sugar
    1/4 ts Ground cinnamon
    1/8 ts Ground nutmeg
    1 ts Fresh lemon juice
    2 ts Cornstarch
    1 c A-P flour
    1/4 c White sugar
    1/4 c Brown sugar
    1 ts Baking powder
    1/2 ts Salt
    6 tb Unsalted butter; chilled, in
    - small pieces
    1/4 c Boiling water

    MMMMM------------------------MIX TOGETHER-----------------------------
    3 tb White sugar
    1 ts Ground cinnamon

    Set oven @ 425ºF/220ºC.

    In a large bowl, combine peaches, 1/4 cup white sugar,
    1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg,
    lemon juice, and cornstarch. Toss to coat evenly, and
    pour into a 2 quart baking dish. Bake in preheated oven
    for 10 minutes.

    Meanwhile, in a large bowl, combine flour, 1/4 cup white
    sugar, 1/4 cup brown sugar, baking powder, and salt.
    Blend in butter with your fingertips, or a pastry
    blender, until mixture resembles coarse meal. Stir in
    water until just combined.

    Remove peaches from oven, and drop spoonfuls of topping
    over them. Sprinkle entire cobbler with the sugar and
    cinnamon mixture. Bake until topping is golden, about 30
    minutes.

    Yield: 1 peach cobbler (serves 4)
