    What's a decent place to buy 8GB RasPi 4s these days? I haven't been
able to find anywhere that has them in stock.

There are none. There's this community effort (or rather, personal, I
think) to see where there is stock: https://rpilocator.com

Most retailers that have them are selling them only in "kit" form (my
guess is that the bare boards give them almost no margin, so they make
a tiny margin on the extra kit components).

pishop.us has some 4B 8GB starter kits in stock, and has for several
    weeks lately.

The "instock tracker" only tracks bare boards.
