    PAUL REVERE STARTS HIS 'MIDNIGHT RIDE' OF WARNING: Massachusetts
    silversmith Paul Revere saddles up and heads off into the night to
    alert his fellow colonial militia members of the British force's
    imminent arrival and their intent to commandeer the American's arms
    as well as to arrest patriots Samuel Adams and John Hancock.

    Henry Wadsworth Longfellow wrote of the famous ride ... in 1860

    Listen, my children, and you shall hear
    Of the midnight ride of Paul Revere,
    On the eighteenth of April, in Seventy-Five:
    Hardly a man is now alive
    Who remembers that famous day and year.

    He said to his friend, "If the British march
    By land or sea from the town to-night,
    Hang a lantern aloft in the belfry-arch
    Of the North-Church-tower, as a signal-light,-
    One if by land, and two if by sea;
    And I on the opposite shore will be,
    Ready to ride and spread the alarm
    Through every Middlesex village and farm,
    For the country-folk to be up and to arm."

    Title: Paul Revere Potato Salad
    Categories: Potatoes, Vegetables, Herbs, Sauces
    Yield: 12 Servings

    4 lb Small red potatoes; in 1"
    - pieces
    2 Bay leaves
    3 cl Garlic; peeled
    1 bn Scallions; chopped
    2 Ribs celery; chopped
    1/4 c Oil
    3 tb Tarragon vinegar
    1 tb Whole-grain mustard
    Salt & pepper
    1 c Mayonnaise
    1/2 c Chopped parsley

    Bring potatoes, bay leaves, garlic with cold, salted
    water to cover to a boil in a Dutch oven. Simmer until
    potatoes are tender, about 12 minutes. Drain. Discard
    bay leaves and garlic.

    Combine scallions, celery, vegetable oil, vinegar and
    mustard in a bowl. Season with salt and pepper. Add
    potatoes.

    Stir in mayonnaise and parsley and serve at room
    temperature or slightly chilled.

    Yield: 12 Servings

    Paul Revere, William Dawes and Samuel Prescott are captured by British
    troops riding from Lexington to Concord, Prescott escapes to warn Concord

    American Revolution begins in Lexington, Massachusetts. The "Shot Heard
    Round the World" took place in Concord later that day.

    Title: Grilled Pork Chops w/Concord Grapes
    Categories: Pork, Fruits,
    Yield: 4 servings

    1/2 c Kosher salt; more to season
    1/4 c Sugar
    2 c Boiling water
    4 Bone-in pork rib chops; cut
    - 1 1/4" thick
    1 Head of garlic
    5 tb Extra-virgin olive oil
    Pepper
    1 lb Seedless purple Concord
    - grapes
    Aged balsamic vinegar; for
    - drizzling

    In a large bowl, stir the salt, sugar and boiling water
    until the sugar dissolves. Let cool until lukewarm. Add
    the chops and refrigerate for 4 hours.

    Meanwhile, set the oven @ 400┬║G/205┬║C.

    Place the garlic on a sheet of foil and drizzle with 1
    tablespoon of the oil. Wrap tightly and roast until very
    soft, 45 minutes. Cool. Squeeze the cloves from the
    skins and mash.

    Light a grill and oil the grate. Remove the pork chops
    from the brine and pat dry. Rub all over with 2
    tablespoons of the oil and season with salt and pepper.
    Grill over moderate heat, turning once, until lightly
    charred and just cooked through, 10 minutes. Transfer to
    plates; keep warm.

    In a large skillet, heat 1 tablespoon of the oil. Add
    the grapes and cook over moderately high heat, stirring,
    until they start to burst, 3 to 4 minutes. Add the
    remaining 1 tablespoon of oil and half of the mashed
    garlic and cook, stirring, until incorporated, 1 minute.
    Reserve the remaining garlic for another use. Transfer
    the grapes to the plates. Drizzle the chops and grapes
    with vinegar and serve.
