Last night I discovered two bags of sweet potatoes sitting on the
counter. I asked Dennis where they came from - his son got them at the food bank give-away. He (Dennis) asked "Can we use these?"
Little does he know .......
I know, they can be used for a lot of things--if you like them.
I do, Gail does not -- which is why I order them from the restaurant
here. Baked Sweets, or fried strips. Have yet to see sweet potato
crisps on the menu -- but they would be good (for me).

Title: Sweet Potato Chips

Yield: 6 servings
1 lb Sweet potatoes; peeled,
- sliced paper-thin *
4 c Oil (enough for about 3" in
- a wok, deep-fryer or wide
- saucepan)
Salt
Cinnamon & sugar; opt
Prepare the sweet potatoes while you heat the oil in a
wok, deep-fryer or deep frying pan to 375ºF/190ºC. Use a
deep-fry thermometer to measure the temperature. Cook a
handful of sweet potato slices at a time. They are ready
as soon as the edges curl and brown, which should take
no more than a minute and probably will take much less.
Do not crowd the pan.
Using a deep-fry skimmer, remove from the oil and drain
on paper towels on a rack. Allow the oil to come back up
to 375ºF/190ºC between batches. Season with salt and the
cinnamon/sugar mix if desired and serve.
