    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Nanny's Rosh Hashanah Apple Cake
    Categories: Cakes, Fruits, Citrus, Herbs, Nuts
    Yield: 6 servings

    2 c (9 oz) A-P flour
    1 c (7 oz) sugar
    1 ts Baking powder
    1/2 ts Kosher salt
    1/2 lb Cold unsalted butter; in
    - 1/2" cubes, more for
    - greasing
    1 lg Egg; lightly beaten
    2 lb Granny Smith apples; peeled,
    - cored, in 1/4" wedges
    1/4 c Raisins
    1/4 c Walnut halves; rough
    - chopped
    2 tb Fresh lemon juice
    2 tb Honey
    2 ts Ground cinnamon
    1/2 ts Fresh grated nutmeg

    In a food processor, pulse the flour with the sugar,
    baking powder, and salt. Add the butter and pulse until
    it forms pea-size crumbles. Add the egg and pulse until
    the dough just comes together. Remove one-third of the
    dough and flatten it into a disk. Flatten the remaining
    dough into a disk as well, and wrap each in plastic.
    Refrigerate for 1 hour.

    Set the oven @ 350+|F/175+|C.

    On a lightly floured work surface, roll the larger disk
    into a 12" circle. Press the circle into a buttered 9"
    pie pan and trim the edges flush with the edge of the
    pan, reserving the trimmings. In a medium bowl, combine
    the apples with the raisins, walnuts, lemon juice,
    honey, cinnamon, and nutmeg; add to the pan. Pinch off
    small pieces of the remaining dough disk and the
    trimmings, and scatter them over the top of the apples.

    Bake until the cake is golden brown and bubbling in the
    center, about 1 hour 15 minutes. Transfer to a rack and
    let cool completely before serving.

    Seems someone doesn't know that this is a real names echo. So what izzit
    you think makes this cake a pie? You didn't write the recipe nor title
    it. With a streusel topping and pie-like dough, this Rosh Hashana apple dessert is half cake, half pie. Not all desserts in a pie pan/plate/dish
    are pies. Whether they use a crust or not.

    Title: Angelina's Pizza Dolce (Italian Cheesecake)
    Categories: Five, Cheese, Citrus, Booze
    Yield: 5 servings

    500 g (1 lb.) ricotta cheese
    5 lg Eggs
    150 g (3/4 cup) sugar; more to
    - taste
    Zest of a small lemon; fine
    - grated
    Good pour of sweet anise
    - liqueur

    Mix all the ingredients together until they form a
    smooth and uniform whole. Pour into a greased pie pan
    and bake at 180+|C/350+|F for about 45 minutes, or until
    completely set and golden brown on top.

    Allow to cool before serving. (The dish will deflate a
    bit as it cools, which is perfectly normal.)

    For a small dessert to serve 4-6 people

    Oops, sorry Dave. I HAD it set for real names, but then had some issues with my fido connection and apparently it created a new echo base on my board when things came back up and it defaulted to handles. It's fixed now.

    Learned something new. I was always taught that if it's in a pie pan then it's a pie, and cakes have a good bit more flour in them.

    F'rinstance, I didn't know Johnny Cake was just ol' white cornbread
    until I met this recipe.

    Title: Old School Johnny Cake
    Categories: Five, Breads
    Yield: 6 Servings

    1 ts Salt
    1/2 c White corn meal
    1 c Scalded milk

    Mix the salt and cornmeal. Stir in gradually the scalded
    milk. Spread in a buttered 8" X 8" shallow pan. Dot with
    bits of butter.

    Bake at 350ºF/175ºC until crisp on top.
