    My problem with turkey is that living more-or-less single a turkey is
    so big that I have to buy pieces/parts if I want it to not spoil
    before it gets et. That's not a problem with most fish.

    That can be a problem even for couples, and on up to small families.
    That is why the internet is loaded with leftover turkey recipes.

    Usually I get thighs or drumsticks - both because they are le$$ pricey
    and because I prefers dark meat.

    One year, at least two score years ago, the local Giant store had an
    overstock of fresh turkeys after Thanksgiving. They sectioned them up
    and sold them for parts. We got some turkey thighs at a ridiculously low price. Our dog was quite happy for days.

    This would be good with leftover cooked turkey.

    Title: Easy Chicken Pot Pie
    Categories: Meat
    Yield: 2 Servings

    1 c Frozen mixed vegetables,
    -thawed
    2 c Cubed cooked chicken
    -Large dice
    1 cn Condensed cream of chicken
    -soup - undiluted
    1 cn Condensed cream of celery

    MMMMM-----------------------SEE NOTE BELOW----------------------------
    -soup - undiluted
    1/4 c Leftover gravy if avail

    MMMMM-----------------------SEE NOTE BELOW----------------------------

    MMMMM---------------------------CRUST--------------------------------
    1 c Baking Mix
    1/2 c Milk
    1 lg Egg

    NOTE:

    Did not use second can of soup or gravy in latest version. Turned out
    fine.

    Heat oven to 425 degrees.

    In a large bowl mix vegetables, chicken and soup until combined. Place
    into a low sided casserole dish at least 8 x 8 inches.

    Stir remaining ingredients with fork until blended. Pour on top of
    chicken mixture

    Bake 25-30 minutes OR until golden brown.

    Reheats well in either microwave or conventional oven.

    Last tested 7/25/04.

    Here is the recipe I have used for leftover turkey. I like it because
    it's tasty and basically can-opener cookery. Prep is *very* easy. The
    pre-made puff pastry is the biggest time saver. I use stainless steel
    souffle' dishes rather than ramekins .... because that's what I have.

    Title: Leftover Turkey Pot Pie
    Categories: Poultry, Vegetables, Pastry, Herbs, Dairy
    Yield: 4 Servings

    2 tb Unsalted butter
    2 cl Garlic; smashed, minced
    1 sm Onion; peeled, diced
    2/3 c Corn niblets; thawed
    1/2 c Diced carrots; thawed
    1/2 c Peas; thawed
    1/3 c All-purpose flour
    1 c Chicken broth
    3/4 c Milk
    1 ts Fresh thyme leaves
    +=OR=+
    1/3 ts Dried thyme
    Salt & fresh ground pepper
    2 c Chopped leftover turkey
    1 Puff pastry sheet; in four
    - 4 1/4" squares
    1 lg Egg; beaten

    Set oven @ 375+|F/190+|C.

    Lightly oil four 10 ounce ramekins or coat with nonstick
    spray.

    To make the filling, melt butter in a large skillet over
    medium high heat. Add garlic, onion, corn, carrots and
    peas and cook, stirring occasionally, until onions
    become translucent, about 2 minutes. Whisk in flour
    until lightly browned, about 1 minute. Gradually whisk
    in chicken broth, milk and thyme, and cook, whisking
    constantly, until slightly thickened, about 1-2 minutes.
    Stir in turkey; season with salt and pepper, to taste.

    Divide the filling evenly into the ramekins. Top with
    puff pastry and gently cut 4 vents in the top of the
    crust. Brush each crust with the beaten egg.

    Place into oven and bake until the crust is golden
    brown, about 20 minutes. Let cool 5 minutes before
    serving.

    That is a load of crap. Butterball (and other companies) sell small
    turkeys. Very easy for folks to cook, and even a crock pot can be used.

    Total BS. All one has to do is get a smaller turkey. Dave knows
    that. So does Butterball, which sells tons of small turkeys to those
    who want to buy them. Just toss a whole one into a crock pot and let
    it cook on low for few hours (same as you would a chicken). And then
    carve it up when done. Just like one would with a chicken.

    Well, the gravy is best done in a saucepan rather in a crock pot ...
