    Title: Chicken Church Casserole
    Categories: Chicken, Pasta, Chilies, Cheese, Corn
    Yield: 50 Servings

    20 c Cooked chicken; cubed
    1 x 2 pound package elbow
    -macaroni; cooked and
    -drained
    6 cn 6oz each mushrooms; sliced
    -and drained
    2 cn 4oz each pimientos; drained
    2 lg Green pepper; chopped
    2 lg Onion; chopped
    4 cn 10 3/4oz each cream of
    -celery soup; undiluted
    4 cn 10 3/4oz each cream of
    -mushroom; undiluted
    2 lb American cheese; cubed
    1 1/3 c Milk
    4 ts Dried basil
    2 ts Lemon pepper
    2 c Crushed cornflakes
    1/4 c Butter; melted

    Combine the chicken, macaroni, mushrooms, pimientos, peppers and
    onions. In a large bowl, combine soups, cheese, milk, basil and
    lemon pepper; add to chicken mixture. Pour about 12 cups each into
    four 13x9x2 inch greased baking pans. Cover and refrigerate
    overnight. Remove from refrigerator 30 minutes before baking.
    Combine cornflakes and butter; sprinkle over casseroles. Cover and
    bake at 350 degrees for 45 minutes. Uncover and bake 15-20 minutes
    longer or until bubbly.

    Title: Cranberry Relish
    Categories: Five, Fruits, Citrus, Nuts, Relishes
    Yield: 5 Servings

    1 lb Fresh cranberries
    2 md Oranges
    2 c Sugar or Sugar Twin
    1 c English walnuts; well broken
    Whipped cream; optional

    Segment and seed oranges, removing all membranes. Grind
    cranberries and oranges together. Add sugar and nuts. Mix
    well and refrigerate to chill. May be served immediately,
    but taste is improved if allowed to blend one day. Will keep
    approximately 2 weeks if kept refrigerated in glass
    container.

    UDD touch: Add a dollop of whipped cream on top if you like.

    All good! :) I'm going to break down and buy a turkey breast and
    cook it up. lol

    We used to buy turkey breast near Thanksgiving when they were on sale.
    As a couple, there was no way we would finish the whole thing. We would
    roast it all, then debone one breast section and freeze it. We had a
    full meal from the other half plus several sandwich meals. My wife only
    had Hellmans Mayo on hers, but I had to have cranberry jelly with all
    turkey, including sandwiches. The bones went into making stock for soup
    along with trims of the lesser parts of the white meat.

    Title: CHICKEN TAMALE PIE
    Categories: Chicken, Mexican, Casserole
    Yield: 3 Servings

    8 1/2 oz Corn muffin mix
    2 c Cheddar or Monterey Jack;
    -shredded - divided
    1 1/2 c Chicken or turkey; cooked
    Shredded or cooked pork
    10 3/4 oz Cream of chicken soup
    4 oz Chiles, green; chopped
    1 c Corn, whole kernel
    1/2 c Scallions; chopped
    2 Garlic clove; minced
    2 ts Chili powder
    1 Jalapeno pepper, minced

    Prepare muffin mix as directed on package, adding 3/4 cup of the
    cheese with the mix. Set aside. (Do not bake.)

    Cook and stir chicken, soup, chilies, scallions, corn, jalapeno
    pepper, garlic and chili powder in a large saucepan until heated
    through.

    Spoon muffin mixture into a greased 2 quart casserole. Spoon hot soup
    mixture over muffin mixture to within 1/2" of the edge. Bake at 350
    degrees for 25 minutes or until cornbread is golden. Top with the
    remaining cheese and let stand for five minutes. Cut into serving
    size pieces.

    NOTE: Tested with left over chicken. Will serve again. Different
    than the usual Tamale Pie - almost Tamale Pie Verde.

    Tested 2-3-07 Will make again.

    That's exactly what we do with them. Unless we are wanting soup and
    sandwich right away, or unless the kid decides to wonder upstairs at
    supper time. (For a 6 year old he can put turkey away)
