    Yield: 4 Servings

    2 c Cooked turkey, shredded
    3 c Broccoli, chopped
    3 tb Butter
    2 tb Flour
    1 Onion, chopped
    1 1/2 c Milk
    1/4 c Parmesan cheese
    2 oz Cheddar cheese, shredded
    1/4 ts Prepared mustard
    Salt and pepper
    1/2 c Uncooked elbow macaroni

    Put the turkey and broccoli into an 8x8 casserole. Preheat oven
    to 325 degrees. Melt the butter in a saucepan, and then add flour
    to make a roux. Add onion and milk, and cook over medium flame
    until mixture is thick, but do not boil. Off heat, add cheeses,
    mustard, salt, and pepper, and whisk until cheese is melted and
    incorporated into sauce. Pour sauce over turkey, add macaroni,
    cover, and bake 45 minutes.

    I, too, never buy KD. But I do get the generic/store brand Mac n Cheeze
    when it's on "special" I average around 20c/box. And the portion of
    pasta is about perfect for a 2 serving go at chilli-mac using canned
    chilli.

    Since there's a turkey in the oven today there'll probably be a
    macaroni and cheese dish something like this sometime next week:

    Title: Lemon Pesto Turkey Pasta
    Categories: Poultry, Pasta, Citrus, Vegetables, Sauces
    Yield: 3 Servings

    Salt
    2 lg Eggs
    Zest of one lemon
    1/2 c Basil pesto (see below)
    1/2 lb Farfalle (bow tie) pasta
    1 tb Olive oil
    1 md Chopped onion
    1 cl Garlic; minced or more
    2 c Chopped cooked turkey meat
    Fresh ground black pepper

    MMMMM---------------------FRESH BASIL PESTO--------------------------
    2 c Fresh basil leaves; packed
    1/2 c Freshly grated Parmesan-
    - Reggiano or Romano cheese
    1/2 c Extra virgin olive oil
    1/3 c Pine nuts or walnuts
    3 cl Garlic; minced
    Salt & fresh ground pepper

    Special equipment needed: A food processor

    Make the pasta: Bring a large pot of water to a boil. Add
    a Tbsp of salt for every 2 quarts of water. (While the
    water is coming to a boil, make to pesto to save time.)

    Combine the basil in with the pine nuts, pulse a few times
    in a food processor. (If you are using walnuts instead of
    pine nuts and they are not already chopped, pulse them a
    few times first, before adding the basil.) Add the garlic
    and cheese and pulse a few times more.

    Slowly add the olive oil in a constant stream while the
    food processor is on. Stop to scrape down the sides of the
    food processor with a rubber spatula. Add a pinch of salt
    and freshly ground black pepper to taste.

    Serve with pasta, or over baked potatoes, or spread over
    toasted baguette slices.

    In a medium bowl, whisk together the eggs, lemon zest,
    and half-cup of pesto. Set aside.

    Add the pasta to the boiling water. The pasta should take
    10 minutes to cook to al dente, cooked through but still a
    little firm. Cook on a rolling boil, uncovered.

    While the pasta is cooking, cook the onions in a large
    sauté pan in olive oil on medium heat until translucent.
    Add the garlic and chopped cooked turkey meat. Cook until
    heated through, then remove from heat.

    When the pasta is ready, reserve 1/2 a cup of the pasta
    cooking water and drain the pasta.

    Add the hot, drained pasta to the pan with the onions and
    turkey. Pour the egg mixture over everything and quickly
    stir to combine. The heat of the pasta will cook the eggs
    sufficiently, though keep the pan off the heat or the eggs
    in the sauce will curdle.

    Salt to taste (depending on the saltiness of your leftover
    turkey and the saltiness of the pesto, you may not need
    any additional salt). Sprinkle with freshly ground black
    pepper to serve. (If you want, sprinkle with a little
    fresh lemon juice as well.) Add back a little of the
    reserved pasta water if you want the pasta a little more
    loose, or if it is too dry.

    We do this as well. The Kraft cheese powder is gluten free so when
    our grandson is up and wants KD we can make it for him and keep the
    kitchen gluten free!

    When we make mac and cheese for ourselfs it's never with the powder. ;)

    sprouts and parsnips so I had to make due with green beans and
    carrots for my two sides. Things were a bit different this year as we
    only had three of us at the house for dinner, although we did
    deliver 3 plates to people who are housebound who would have been
    table guests in the old days.

    Today we dined simply on turkey and cranberry bunwiches. I'll get
    more creative tomorrow.

    Title: Cheesy Tomato And Turkey Bake
    Categories: Casseroles, Pasta, Turkey, Cheese, Dried
    Yield: 6 Servings

    1 lb Pasta; tubular ie macaroni
    -cooked
    2 c Turkey; 1" cubes, cooked
    28 oz Canned tomatoes
    -drained & coarsely chopped
    500 ml Cottage cheese
    1 c Cheddar cheese; shredded
    4 Green onions; chopped
    1 ts Marjoram, dried
    1/2 ts Pepper, freshly ground
    1/2 c Breadcrumbs, fresh
    1 tb Butter; cut in tiny cubes

    In lightly buttered 9"x13" baking dish, toss together cooked
    pasta, turkey, tomatoes, cottage cheese, cheddar, green onions,
    marjoram and pepper. Sprinkle crumbs on top, dot with butter.
    (Casserole may be prepared up this point, covered and refrigerated
    for up to 4 hours.) Bake at 350F till casserole is bubbling and
    top is lightly browned, about 30 minutes.

    Been several years since I bought *any* M&C. Last time was at National Supermarket (now defunct) when they were closing out their store-brand
    in packets of five 7 oz. boxes for just U$1. I bought three packs and
    still have a couple boxes in the cupboard. That was when I was still in Trailer-Trash Acres and before I bought this house. Currently my best
    price on store brand M&C is U$0.39 (was U$0.89) Hy-Vee Original Macaroni
    & Cheese Dinner - 7.25 oz.

    Title: Easy Leftover Turkey Stroganoff (?)
    Categories: Poultry, Mushrooms, Dairy, Herbs, Pasta
    Yield: 4 Servings

    1 cl Minced garlic
    3 tb Olive oil
    1 c Sliced mushrooms
    3 c Good, thick turkey gravy
    1 tb Dry summer savoury
    1 ts Fresh ground black pepper
    1/2 c Dairy sour cream
    4 c Leftover turkey diced/sliced
    - or shredded

    Begin by sauteing the garlic and mushrooms in the
    olive oil for several minutes until the mushrooms
    begin to get some good colour.

    Add the other ingredients except the turkey and
    simmer for only about 5 minutes.

    Add the leftover turkey and continuing to simmer until
    the turkey is well heated.

    Serve over egg noodles.

    I was out of summer savory - so substituted a mix of

    Title: Chicken and Pasta Bake
    Categories: Casseroles, Pasta, Chicken, Cheese, Mushrooms
    Yield: 6 Servings

    1 c Onion, chopped
    1 c Mushrooms, fresh, sliced
    1 c Zucchini
    1/2 c Celery
    1 c Garlic, minced
    3 tb Butter
    1 c Tomatoes, whole, drained,
    -coarsely chopped
    1 ts Basil, whole, dried
    1/2 ts Salt
    1/4 ts Red pepper, crushed
    8 oz Macaroni shells, uncooked
    3 c Chicken, cooked, chopped
    1 1/2 c Whipping cream
    2 c Monterey jack cheese, shred
    1/2 c Parmesan cheese, grated

    Saute first 5 ingredients in butter until vegetables are
    crisp-tender. Stir in tomatoes, basil, salt, and crushed red
    pepper; set aside. Cook pasta and drain. Combine pasta, vegetable
    mixture, and chicken in a large bowl; spoon mixture into an 11 x 7
    x 1 1/2 inch baking dish. Combine whipping cream and cheeses in a
    medium saucepan; cook over low heat until cheese melts, stirring
    frequently. Pour sauce over pasta mixture. Bake, covered, at 350 F
    for 40 to 45 minutes or until thoroughly heated.

    gets good tips but has to put up with obnoxious drunks hitting on
    her. And Charlee is learning the ropes in her mother's painting and
    renovation business. Neekha is currently a full time mom and
    housewife and her partner makes crazy money in the oil patch.

    Title: Curried Pumpkin Bisque with Cheddar Cheese
    Categories: Soups, Chicken, vegetables, Curry, Cheese
    Yield: 6 Servings

    1 tb Olive oil
    2 c Chopped onion
    1/2 c Chopped green pepper
    1 tb Curry powder
    5 c Chicken broth
    15 oz Can pureed pumpkin
    1 c Frozen corn
    1/2 c Crushed tomatoes with puree
    1 ts Dried rubbed sage
    S&P
    1 c Packed grated extra sharp
    Cheddar

    Heat oil in heavy large pot over medium heat. Add onions and bell
    pepper; saute until vegetables begin to soften, about 8 minutes.
    Add curry powder and stir 1 minute. Add 5 cups broth and next 4
    ingredients and bring to a boil. Reduce heat and simmer 15
    minutes to blend flavors, stirring frequently. Season with salt
    and pepper.

    Can be made 1 day ahead. Cool slightly. Chill until cold, then
    cover and keep chilled. Rewarm over medium heat, adding more both
    if soup is too thick. Ladle soup into bowls. Top with cheese.
