A long drought, strong winds, buildings made primarily of wood, and
perhaps a twitchy cow all combine to stoke a minor fire into a
conflagration the likes of which Chicago has never seen. Two days of
ferocious flames will leave hundreds of thousands homeless and kill
some 300 people.

Title: Mrs. Leary's Irish Burgers

Yield: 4 burgers
1 lb Ground beef
2 tb Fine minced onion
1 cl Garlic; minced
2 ts DiJon mustard
1/4 c Guinness beer
1/2 tb Oil
1 ts Salt
1/4 ts Black pepper
4 sl (thick) Cheddar cheese
8 sl Thick-cut bacon; cooked
- crisp
4 English muffins; split,
- toasted
In a large bowl combine ground beef, onion, garlic,
mustard, Guinness, oil, salt & pepper. Mix using your
hands until just combined. Be careful not to overmix.
Heat the grill or griddle to medium-high heat. Lightly
grease the grill grates. Add to the grill and cook,
turning at least once, until fully cooked (the internal
temperature has reached 160 degrees F.). During the last
minute of cooking top each patty with a slice of cheddar
cheese, cook until the cheese has melted.
Place burgers onto English muffins and top with bacon.
