    And now for some North African beet salad recipes

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Beet Potato Salad with Lemon
    Categories: Salads, Chilies, Ethiopian
    Yield: 4 Servings

    1/2 Onion; chopped
    1/4 c Fresh lemon juice
    3 tb Vegetable oil
    1 Jalapeno chili; seeded,
    -minced
    1 lb Red skinned potatoes
    1 lb Beets

    Beets and potatoes team up in this simple, slightly spicy
    Ethiopian salad

    Combine onion, lemon juice, oil and jalapeno in large bowl. Set
    aside. Cook potatoes and beets in separate large saucepans of
    boiling salted water until just tender, about 30 minutes for
    potatoes and 45 minutes for beets. Drain. Cool slightly. Peel and
    cut into 1/2" cubes. Add beets and potatoes to lemon mixture and
    toss to coat. Season generously with salt and pepper. Serve warm
    or at room temperature.

    Title: Beet Appetizer Salad
    Categories: Moroccan, Salads, Vegetables, Chilies
    Yield: 4 servings

    2 lb Beets
    Salt
    1/2 ea Spanish onion, diced
    4 ea Tomatoes, skinned, seeded &
    - diced
    2 ea Garlic cloves, chopped
    4 tb Italian parsley, chopped
    4 tb Cilantro, chopped
    4 md Potatoes, boiled
    DRESSING:
    2 tb Vinegar
    8 tb Olive oil
    Salt & pepper
    Hot red pepper
    GARNISH:
    Black olives

    Cut off ends of beets. Wash well & cook in boiling salted water
    until tender. Drain & remove skins under running cold water.
    Dice. Mix together the dressing ingredients. Combine beets in a
    salad bowl with the onion, tomato, garlic cilantro & parsley. Pour
    over half the dressing, toss gently & chill for 30 minutes. Slice
    the potatoes, place in a shallow bowl & toss with remaining
    dressing. Chill. When ready to assemble, arrange beets, tomato &
    onion in the centre of a shallow bowl & arrange potatoes in a ring
    around them. Garnish with olives.
