    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Liver Pate
    Categories: Appetizers
    Yield: 2 Cups

    1 Turkey liver
    6 oz Beef liver
    8 oz Chicken livers
    6 Dried mushrooms; see note
    1 Onion; quartered
    2 c Water
    2 ts Chicken bouillon; granules,
    -OR
    2 ts Vegeta seasoning
    1/4 c Scallions; minced
    1/4 c Butter
    2 tb Cognac
    2 tb Mayonnaise
    1 1/2 ts Dijon mustard
    1/2 ts Salt
    1/2 ts Celery salt
    1/4 ts Black pepper; freshly ground
    1/8 ts Ground thyme

    Combine liver, mushrooms, onion quarters, water, & bouillon or Vegeta
    in a saucepan. Bring to a boil, reduce heat, cover and simmer 10
    minutes. Drain and discard all but the liver and the mushrooms.

    Place liver and mushrooms in work bowl of food processor. Add green
    onion and butter; process for 10 seconds. Scrape down sides of work
    bowl; add remaining ingredients and continue processing until smooth.

    Oil a 2-cup mold or small bowl. Pack liver mixture into mold. Cover
    tightly with plastic wrap. Refrigerate several hours, or overnight.

    Turn pate out of mold and serve with assorted crackers.

    and posted to NCE by Dave Sacerdote, 11/2005

    Dave's notes: The mushrooms add a richer flavor to the pate; any can
    be used, but I particularly like oyster mushrooms in this.

    When the pate is first made, and you taste it to check for seasoning
    it will seem "sharp" - the onions will be noticeable and the cognac
    will still have a raw edge.

    After chilling overnight in the mold, however, the flavors will merge
    and become much more subtle. This stuff should definitely be made
    the day ahead, then unmolded when cold, and allowed to stand to room
    temperature before eating.

    I used a heart-shaped Polish pottery dish as a mold. I considered
    using dehydrated green peppercorns to spell out "I love pate" in
    cursive lettering on the top as a garnish, but I'm not sure how my
    inspired tackiness would go over with the inlaws, so I'll behave and
    just use a light sprinkle of coarsely cracked black pepper instead.

    use for handicapped spots. Usually after I have mentioned to them that
    their placard is not displayed and they give me a bushel of attitude.

    And the cops/traffic wardens here don't just write a ticket to the owner
    of the licence plates. They issue the ticket to the driver - who usually screams like a wounded eagle and claims discrimination. Which works not
    at all since many of the nabs are of the same ethnicity as the violator.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Pepperoni Pizza Scrolls
    Categories: Breads, Beef, Cheese, Sauces, Snacks
    Yield: 4 servings

    2 ts Dried yeast
    250 mL Lukewarm water
    400 g A-P (plain) flour
    2 ts Salt
    3 tb Olive oil
    1 tb Jarred pizza sauce
    150 g Cheese
    50 g Pepperoni; sliced

    Add yeast to water. mix well.

    Put flour and salt in bowl, add yeast mixture and mix
    dough with hands.

    Knead dough.

    Place dough in bowl and cover with cling wrap. Let dough
    rest for 30 minutes.

    Knead again for 5 minutes.

    Separate dough in two pieces and roll each into a
    rectangle.

    Spoon pizza sauce, cheese, and pepperoni on to dough.

    Roll dough to form cylinder, cut in 8 pieces.

    Place scrolls on baking tray and put in oven.

    Bake for 15-20 minutes at 190ºC/375ºF

    Yields: 4 Servings

    They're generally too busy 'splaining to the Keystones why they think
    they shouldn't get hit with the U$250 ticket/fine that I can make my

    Yield: 12 Servings

    8 oz Neufchatel cheese; sub cream
    - cheese if you must
    1/4 c Small curd cottage cheese
    1/4 c Tofu
    1 ts Honey
    1 tb Chopped raisins
    1 tb Chopped sunflower seeds

    In a small bowl, combine all of the ingredients and chill.

    It's hard to catch offenders unless an officer of the law is nearby.
    We've seen a lot of offenders. Our Lowe's (hardware) has several spots
    for military (active and retired) reserved; one day Steve wanted to use
    one but they were all full. He parked nearby, saw a young man going to
    his vehicle in one of the spots so asked him what branch of the military
    he served in. Young man replied that he hadn't served, took one of those
    spots because it was convenient. Same principle, unless someone is there
    to monitor, it's an honor system.

    We've seen that, sometimes wondered if mom was inside, shopping but

    Good. At least this is positive! I did something and can't walk or

    Sigh, can't come up with a winner every time. I tell Steve that I got
    most of my cooking mistakes out of my system before we got married. (I
    had to cook for the family a lot.) I've made a few oopsies along the
    line but not nearly as many as if I'd not known how to cook. Anyway,
    he's been eating my cooking for 47 years. (G)

    I suspect ours will go on some time today or tomorrow. We're expecting
    wind and rain but not the full force of Hurricane Ian (subject to storm
    staying on its present course) over the next few days. Temps have cooled
    into the 60s for daytime highs.

    According to my primary care doctor, no. It started with a case of
    bronchitis in late December, 2019 and has flared/receeded quite a bit
    since.

    I appreciate my dishwasher. (G) I'm still not cooking meals but offering suggestions, like for the pizza Steve made Friday night. It was loaded
    with red bell pepper, onion, mushroom, pepperoni, garlic sausage,
    provelone and mozzarellla. It had a thick crust to support everything &
    he cut it into 8 pieces. Both of us have been satisfied with one piece
    per meal.
