    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Melvin Larocque's Bannock
    Categories: Native, Canadian, Quickbreads
    Yield: 12 Servings

    3 c All purpose flour
    3/4 ts Salt
    2 tb [Scant] baking powder
    1/2 c Lard; melted
    1 1/4 c Or more water; divided
    1/2 c Raisins, currants or dried
    -blueberries or cranberries
    -[optional]
    2 tb Sugar [if fruit added]

    Melted shortening, butter or margarine can be used but the taste
    will be altered. Lard is traditional.

    Measure flour, salt, baking powder [and dried fruit and sugar] into a
    large bowl. Stir to mix. Make a well in the center and pour in a 1/2
    cup water. Do not mix yet. Then add the melted lard and the rest of
    the water. Depending on the dryness of the flour add up to 1/4 cup
    more. The resulting batter should be slightly sticky, not flaky like
    pie pastry. Stir with fork to make a ball. No not overmix; stop as
    soon as the ball of dough lifts away from the bowl. Turn out onto a
    working surface. Knead gently about 10 times. Do not over work the
    dough and let the gluten develop. Or mix and knead with your hands in
    the bowl. Pat into a flat circle 1 inch thick. Cook in a greased
    frying pan over medium heat allowing 15 minutes each side. Use two
    lifters for easy turning. Serve hot with butter. Break it off in
    chunks or slice into wedges with a knife. May also be baked on
    greased baking sheet at 375 deg for 25 to 30 minutes or 450 deg for
    about 20 minutes for a golden brown exterior and a soft moist
    interior. The bannock will brown easier with the addition of at least
    some of the optional sugar.

    This tastes best in a frying pan outdoors over a wood fire.

    It was cooked in pioneer days in cast iron frying pans over open
    fires. Toutons use a similar dough where small rings are deep fried
    like doughnuts. Oven baking has become an alternative to the cast
    iron frying pan when made at home. The dough can also be wrapped
    around green de-barked sticks driven into the ground beside the camp
    fire.

    Variations: Substitute 1 cup whole wheat flour and/or 1/2 cup oatmeal
    for up to 1 1/2 cups of white flour.

    Add fresh fruit instead of dried.

    Add aged shredded Cheddar cheese and/or chopped onion, garlic, herbs
    etc. for a savory version.

    My power is included in my rent (old lease) and the small apartment size
    chest freezer we have would be plugged in anyway for other frozen staples.
    The one built into the fridge is not big enough for anything except ice.

    I see that Ontario's power rates vary according to peak and off peak
    time periods but average 13 cents per kwh overall while Yellow-
    knife's is 36 cents, almost triple. We have a hydro based system
    with diesel generator backup, as we have a single source and are not
    part of the continental grid. Inuvik is all diesel and 85 cents.
    Really remote places are subsidised with a stabilised rate of 90
    cents. The real cost in Colville Lake, the most remote community
    up here, is $3.22! But they pay 90 cents.

    I have one as well that is occasionally plugged in during the summer
    months if I temporarily have too much stuff for the fridge's small
    freezer. But I don't run it steady.

    When Ray and Raine still lived with us as teenagers with voracious
    appetites (and had lots of friends) and Ray did so much hunting and
    fishing I ran a large chest freezer year round.

    Come winter I can store stuff outdoors for about 5 months (in animal
    proof containers).

    The one built into the fridge is not big enough for anything
    except ice.

    Mine is 3 cubic feet so it can handle a big bucket of ice cream, a
    few cans of concentrated orange juice and a fair amount of meat.

    lack of electricity is not an issue here. ;)

    I suppose I could for a month or two depending on the year. However the pigeons would get into anything. Animal proof container wouldn't stop
    a Oshawa gang member Pidgeon. They carry weapons. LOL

    Ours is very small. Apartment sized fridge / freezer. As we're on the
    old lease we don't get new equipment when this breaks they bring us up
    another old junker from the back room.

    Wow.

    Most of the off road communities are accessible by both summer river
    barge and winter ice road. But the small river draining Colville
    Lake does not drain into the Mackenzie River where the barges run
    but goes straight north to the Arctic Ocean. The only way to haul
    freight in including diesel oil for the community generator and home
    heating fuel is a 651 km long winter road that's only open to heavy
    trucks that are restricted to 50 km/hour for about 90 to 105 days a
    year. The cost of living there is incredibly high.

    Title: Risotto Alla Milanesa
    Categories: Rice, Italian, Beef, Offal, Wine
    Yield: 4 Servings

    4 tb Butter plus 4 Tsp
    1/4 lb Beef marrow, chopped in
    1/4 inch cubes
    1 md Spanish onion, chopped in
    1/4 inch dice
    2 c Vialone Nano rice
    6 c Strong chicken stock;
    Simmering
    1/2 c Red wine
    1/2 ts Saffron threads
    1/3 c Freshly grated Parmigiano

    In a 6 quart saucepan, melt 4 tablespoons butter with marrow and
    onion and cook over medium heat until onion is soft but not browned.
    Add all the rice and, stirring regularly, cook until opaque, about 2
    to 3 minutes. Add a 6 ounce ladle of hot stock, 1/2 cup red wine and
    saffron and bring to a boil. Stirring constantly, cook until stock
    level goes below level of rice. Add another 6ounce ladle and repeat
    the process for 16 minutes, until rice is al dente, yet creamy and
    tender. Remove from heat and add cheese and remaining butter. Season
    to taste and serve immediately with stufato.
