    Hi everyone,

    Today is my 50th birthday. I made it after all. <G>

    On top of that, yesterday I was awarded my Social Security benefits.
    Looks like 2022 might turn out to be a good year for me.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Lincoln's Birthday Meat Log
    Categories: Meatloaf
    Yield: 8 Servings

    1 1/2 lb Ground beef
    1 1/2 c Soft bread crumbs
    2 tb Instant minced onions
    1/2 ts Margarine, crumbled
    1/4 ts Peppers
    1 Egg lightly beaten
    2/3 c Milk
    8 sl Sharp cheese
    6 Servings of prepared instant
    -mashed potatoes
    1 tb Butter
    1 ts Onion salt
    2 Egg yolks
    1/4 c Milk

    Mix together beef, bread crumbs, onion, margarine and salt and
    pepper. Beat egg until bubbly. Add 2/3 cups milk to meat mixture and
    mix gently but thoroughly. Shape into 9x12" rectangle on wax paper.
    Using paper to lift meat, roll into 9" cylinder. Place on a shallow
    pan and bake at 350'F. for 45 minutes. Prepare instant potatoes. Add
    butter, onions and salt to potatoes. Beat egg yolks. Add milk to
    potatoes. Take meat loaf out of oven and frost with mashed potatoes.
    Return to oven 10 minutes longer. Place cheese on top and put under
    broiler until cheese melts. Serves 6-8.

    Title: President Roosevelt's * Birthday Cake
    Categories: Cakes, Chocolate, Desserts
    Yield: 9 Servings

    1 c Butter
    1 1/2 c Sugar
    3 Eggs; well beaten
    1 c Cold black coffee
    2 c Flour
    1/2 c Cocoa
    1/2 ts Salt
    1/2 ts Vanilla
    1 ts Baking soda
    1 tb Vinegar

    Cream butter and add sugar, a little at a time. Cream
    well; add eggs. Sift flour, salt, soda and cocoa together
    3 times.

    Add coffee with flour mixture to batter, alternating.
    Then add vinegar and vanilla. Bake in 9" layer pan 20
    to 35 minutes or in a loaf pan about 30 to 40 minutes
    in 350oF oven. (until a toothpick used to test doneness
    comes out clean).

    As I recall you have been fighting to get SSI for quite some time. Congradulations on finally getting it done.


    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Slow Cooker Vegetable Soup
    Categories: Easy, Crockpot, Tested
    Yield: 4 Servings

    8 oz Round steak, cut into
    - 1/2 inch cubes
    1 ea 14 oz canned diced tomatoes
    - undrained
    1/2 c Water
    1 md Potato, peeled and cubed
    1 md Onion, med diced
    1 1/2 ea Ribs celery, sliced
    1 ea Carrot, peeled, sliced
    1 ea Beef bouillon cub
    1 ea Vegetable bouillon cube
    1/4 ts Dried basil
    1/4 ts Dried oregano
    1/4 ts Salt (optional)
    1 ds Granulated garlic-to taste
    1/8 ts Pepper

    MMMMM-----------------------LATE ADDITION----------------------------
    1/2 c Frozen mixed vegetables
    -or more if you have room in
    The crockpot

    Combine first 14 ingredients in 1 1/2 quart slow cooker. Stir to
    combine. Cover and cook on high for 4 hours. Add frozen mixed
    vegetables and cook 1 hour longer OR until the meat and original
    vegetables are tender.

    Original recipe said cook 6 hours, then add frozen veggies and cook 2
    more hours, but in my crockpot things were done in 4 hours plus the
    additional hour after the frozen veggies were added.

    Tested 11/09

    Good vegetable soup - veggies were done but not over done. Can
    experiment with spices - change or leave out. Will make this again.
    Can of course be doubled for larger crockpot.

    That's got to help the old cash flow. I didn't know your plan
    allowed for that. I have a BIL who is wheelchair bound. He was able
    to tap into the Canadian Pension Plan at 50 instead of 65 too.

    Milk in meatloaf? Does anyone here do that? I use either fine, dried
    bread crumbs or crumbled crackers to help soak up and retain the
    rendered fat from the cheaper grinds of beef (30 % fat). I also bake
    it on a raised drain rack insert in a bread pan. Soft bread crumbs
    wouldn't absorb much fat and milk would make the whole thing mushy
    and wet.

    bones in my right hand (I'm left handed) and assorted bruises from a
    fall the other day. Not one of my better days in an up and down year.
    Steve is doing all the cooking and cleaning now.

    The area for surgery is often marked to make sure there are no errors.
    You will be kept comfortable and safe by your anesthesia provider. You
    will be asleep during the surgery. The surgery will take about 30 to 60 minutes.

    There you go.

    No more problem.

    It's been a week today. The bruises are turning from purple to yellow
    green and the nerves in the knee are settling down. I've got the ok to
    use the hand/knee without their braces lightly, around the home only,
    but haven't attempted to do so yet. Maybe in a day or so.

    If the surgery is to help your right foot, go ahead and do it. I had
    some done on my left foot that was supposed to help; it didn't really,
    but I've read of its success with others, usually athletes. The
    advantage of foot surgery is that you still hsve both arms/hands to help
    you get things done; I'm very restricted with one hand basically out of commission. (G)
