decent waitstaff is hard to find (at) U$4.35/hr

    Well of course it is!

Wait staff here make minimum wage: $14.59 per hour plus tips. Fast
food workers who generally don't earn tips are getting $17 at most
places and the local McDonald's is up to $18 plus a benefits
package. That extra dollar gets them the best, fastest, most
dependable, and pleasant workers in the city.

Here's a current ad from our really popular, award winning brew pub.
The young, hip waiters can hit $300 in tips nightly while
socialising with their peer group and maybe $500 on Friday and Sat.
Dishwashing isn't fun or glamourous and doesn't earn tips so the pub
is offering: "NWT Brewing Company: Part-time/Full-time Dishwasher
needed! We currently pay $23/hour, a free shift meal, staff
discounts on food, beer and merchandise, company events, and health
benefits for full-time." Every time the dishwasher quits they raise
    the wage one more buck!

Title: Chalupas De Queso De Cabra (Chalupas with Goat's Cheese)
Categories: Mexican, Cheese, Beans, Tortillas, Corn
    Yield: 4 Servings

    1 1/2 lb Tortilla masa
    10 oz Goat's cheese, crumbled
1/2 ts Salt, or to taste
    4 tb Olive oil
    2 Onions, minced
    2 Cloves garlic, minced
    8 oz Tomatoes, roasted, peeled
    And chopped
1 c Cooked pinto or black beans,
    Drained and mashed.
    1 Head romaine lettuce,
    Shredded

Knead the tortillas masa with half the goat's cheese and the salt
until uniform in texture, and color. Divide the dough into 30 (1 oz.)
oblong balls and flatten each into 1/8 inch oval tortillas. Cook on
a hot cast iron pan or griddle over medium heat for 1 to 2 minutes on
each side until they are golden brown. As soon as they are cool
enough to handle, pinch up the sides to form a ridge 1/4 inch high.
Set aside while making the bean paste.

Heat the oil in a large frying pan over medium heat and saute the
onions and garlic until translucent. Add the tomatoes and a little
salt and cook for about 5 minutes. Add the beans and cook, stirring,
until they have dried to the consistency of a paste.

To serve, warm the tortillas on a cast iron griddle or pan, and
spread a little bean paste on them. Top with remaining goat's cheese
    and sprinkle with lettuce.

Here in Tennessee, state law requires that if on any shift if a
waitperson does not make the equivalent to $7.35/hr with wages and
tips, the employer must make up the difference.

That's still way below the poverty line.

Title: Gorditas - Little Fat Tortillas
    Categories: Tex-mex, Tortillas, Corn
    Yield: 4 Servings

    1 lb Fresh masa
    1/2 c Sifted flour
    3 tb Shortening
    1 ts Salt

    Fillers:

Your choice taco meat--such as cooked ground beef, pork, chicken,
    turkey, etc.

Your choice of extras--such as tomatoes, onions, grated cheese, hot
    sauce, etc.

Here's what you do: Place masa, flour, shortening, and salt in a
bowl, and mix until smooth. Shape dough into balls the size of
large walnuts, then pat each one between moistened palms of hands
until they are the size of small pancakes (about 3 inches across).
Cook on both sides in an ungreased heavy skillet. While still
hot, pinch up edges between thumb and fingers to form a border,
and pinch up a small amount in the center so that they look like
sombreros. Set aside until ready to serve.

These little guys can be filled with your favorite taco meat,
shredded lettuce, diced tomato, chopped onions, cheese, and hot
sauce. Just before serving, fry cakes in hot oil until golden brown
and drain on absorbent paper. Arrange on a large serving platter
and fill brim of each little sombrero with fried chorizo, beef,
chicken, or turkey, plus any other taco topping you desire to
sprinkle on them. This recipe should make between 12 to 15
gorditas. Eat them like tacos or chalupas--it's a great finger
    food.

Not when the cup is packed w/crushed ice before beverage is added. 12 oz
is considered a single serve of cold beverage in the lower 48. You might
be able to get 16 oz of beverage into one of those ice-filled 32 oz cups

    Hello Jim,

decent waitstaff is hard to find (at) U$4.35/hr

    Well of course it is!

Wait staff here make minimum wage: $14.59 per hour plus tips. Fast

The federally mandated minimim wage for wait staff in the USA
is $2.13/hour. I doubt it is much higher in Canada, even given
    their currency rate.

food workers who generally don't earn tips are getting $17 at most
places and the local McDonald's is up to $18 plus a benefits
package. That extra dollar gets them the best, fastest, most

Where can that fantasyland be found? Nowhere on this planet,

All employees share tips. Including dishwashers. It is all part
of the federally-mandated minimum wage, which is $2.13/hr in the USA.
This does not apply to those hired by contract, such as guests and entertainers, who keep all tips.

    Hello Jim,

decent waitstaff is hard to find (at) U$4.35/hr

Some places, folks have to *pay* in order to work there.

    Well of course it is!

All tips are shared, and cannot be directed towards any specific
part or portion of waiters/staff at an establishment. That includes
    dishwashers and other kitchen help.

I think USA is the only country where tipped workers are paid as I outlined to Sean.

Dude, in many other countries tips are included as part of the bill.
Even in some restaurants in the USA. Do keep up.

What an idiotic thing to write. Amazing. Maybe you can invite those
millionaire dishwashers to a party and have a real blast. Of course,
finding a bartender at an affordable price might be kind of hard to
find given the outrageous wages dishwashers make.

Hence the need to provide plastic cups and plates, along with a trash
can for guests to toss them in. No dishwasher required.
