  • Chili beans

    Roslind's dad was an Alberta French Canadian, just one generation
    away from France; he used to make a beanless chili. He might have
    been the only Canadian to do so in the old days but we are unaware
    that he ever met a Texan. There were lots in the central and south
    Alberta oil patch after Leduc blew in, in 1947, but he was a Hudson
    Bay man trading throughout northern Alberta and the NWT.

    Roslind likes mild, beanless chili made with little or no cumin so
    while she's making that I make a batch of very spicy beans with lots
    of cumin separately and mix them together in my bowl.

    Kidney beans are OK and easy to find but my favourite beans for
    chili are those small Mexican red ones that are elliptical not
    kidney shaped, dark red coloured and have a cooked texture that is
    smooth, creamy and tender as opposed to dry, firm and meaty. But
    they aren't as common, at least not around here.

    Good idea. Solves the issue... I might have to do something similar
    one batch for her and one for me.

    I'll have a look. We can get almost any kind of bean and rice now
    with the various speciality grocery stores. The dirty shwa has
    become racially varied now.
