    Monday marks Casimir Pulaski Day in Illinois.

    Pulaski (1745-1779) was a Polish patriot and American Revolutionary War
    hero who was known as "the father of the American Cavalry."

    There are also more ethnic Poles in Chicago than in Warsaw, Poland.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: St. Casimir's Lemon Polish Sugar Cookies
    Categories: Cookies, Snacks, Desserts
    Yield: 18 servings

    1 c Butter; softened
    1 1/2 c Sugar; extra for rolling
    3 Egg yolks
    1/2 ts Lemon extract
    2 c Flour
    1 ts Baking soda
    1 ts Cream of tartar

    Set oven @ 350°F/175°C.

    Cream sugar and butter.

    Add egg yolks and lemon extract.

    Add flour, baking soda and cream of tartar.

    Mix until well combined -- dough will be stiff.

    Pinch off dough and roll into 1" balls.

    Roll in granulated sugar.

    Place on ungreased cookie sheets.

    Bake until set, not brown, for 10-12 minutes.
