    Title: Mom's Scalloped Potatoes
    Categories: Potatoes, Dairy, Vegetablkes, Soups
    Yield: 6 servings

    10 3/4 oz Can cream of mushroom soup
    3/4 c Milk
    1/2 c Dairy sour cream
    1 ts Onion powder
    1 ts Salt
    1/4 ts White pepper
    32 oz Bag shredded potatoes;
    - thawed
    1/8 ts Paprika
    1 Scallion; sliced

    Set the oven @ 400-|F/205-|C.

    Coat a 2 quart casserole dish with cooking spray.

    In a large bowl, combine soup, milk, sour cream, onion
    powder, salt, and pepper. Add potatoes and toss until
    evenly coated.

    Place in prepared casserole dish. Sprinkle with paprika,
    cover, and bake 25 minutes. Remove cover and bake an
    additional 35 to 40 minutes, or until golden on top.
    Sprinkle with the scallions and serve immediately.

    Title: Loaded Baked Potato Rounds
    Categories: Potatoes, Herbs, Cheese, Dairy, Pork
    Yield: 48 servings

    4 md Potatoes (7 oz ea); in 1/4"
    - slices
    3 tb Olive oil
    1 tb Minced fresh rosemary
    +=OR=+
    1 ts Dried rosemary, crushed
    1 ts Kosher salt
    1/4 ts Garlic powder
    1/4 ts Coarse ground pepper

    MMMMM--------------------------TOPPING-------------------------------
    3/4 c Shredded mozzarella cheese
    3/4 c Sour cream
    2 Green onions; sliced
    1/2 ts Kosher salt
    1/8 ts Pepper
    6 sl Bacon; cooked, crumbled

    Set oven @ 425ºF/218ºC.

    Toss together first 6 ingredients. Place potato rounds
    on greased 15" X 10" X 1" pans. Roast until tender,
    12-15 minutes.

    Mix the first 5 topping ingredients; spoon onto potato
    slices. Top with crumbled bacon. Transfer to serving
    platters. Serve immediately.
