    ** Beer may be used as well - but the flavour will
    be changed.

    We'd not use it, don't like the flavor.

    Title: Biscuit Mix Tempura Vegetables
    Categories: Vegetables, Breads
    Yield: 8 servings

    Oil; for frying
    1 1/2 c Biscuit mix
    1 tb Butter; melted
    2 lg Eggs; separated
    3/4 c Light colored beer *
    1/8 ts Fresh ground black pepper
    2 lb Assorted fresh vegetables
    2 ts Sea salt

    * may use club soda or lemon-lime soda

    Set oven @ 200┬║F/93┬║C.

    In a large saucepan over medium heat, heat about 4" of
    oil until thermometer registers 360┬║F/182┬║C.

    In a large bowl, blend biscuit mix, butter, egg yolks,
    beer and black pepper to make a smooth batter. Set
    aside.

    In a medium bowl, whisk egg whites until slightly froth.
    Fold into the biscuit mix. Let stand for about 10
    minutes.

    Dip vegetable pieces, one at a time, into the batter.
    Place in hot oil, 4 at a time, and deep fry, turning
    once, until golden brown, 15 seconds per side. Place on
    paper towels to absorb excess oil. Transfer to an
    ovenproof platter and keep warm in preheated oven. Make
    sure oil is the correct temperature before adding each
    batch. Serve with a light sprinkling of sea salt.

    Serves 8.

    TIPS: Cut the vegetable pieces the same size so they
    will fry evenly.

    VARIATION: For spicy vegetables, add 1 ts cayenne
    pepper to batter prior to frying.

    1 tb Olive oil
    4 Duck Marylands *

    MMMMM---------------------------SALAD--------------------------------
    2 Pink lady apples; cored, in
    - matchsticks
    2 Handfuls baby greens
    2 tb Roasted hazelnuts; rough
    - chopped
    Extra virgin olive oil
    Sea salt & ground pepper

    MMMMM--------------------------POLENTA-------------------------------
    500 ml Milk
    150 g Instant polenta
    pn Nutmeg
    1 tb Horseradish cream
    Butter & cream

    * A duck Maryland is a leg-quarter (drumstick & thigh)

    Set the oven @ 392ºF/200ºC.

    Heat olive oil in a heavy-based pan and brown the duck
    all over. Transfer to a roasting tray and place in the
    oven for 40 minutes or until cooked as desired.

    Meanwhile, make the polenta. In a medium saucepan, heat
    the milk until almost boiling, then turn the heat down
    and add the polenta in a slow steady stream, stirring
    continuously with a wooden spoon. Stir over low heat
    for about 5 minutes. Add the nutmeg, horseradish cream
    and butter and cream to taste. Season.

    Combine the salad ingredients and dress with olive oil.

    To serve: Spoon polenta onto serving plates, top with a
    duck Maryland and arrange salad on the side.

    Serves 4.

    Categories: Seafood, Vegetables
    Yield: 6 Servings

    6 Filets-Roughy, Trout, Sole
    1/2 c Flour
    1/4 c Extra Virgin Olive Oil

    MMMMM---------------------------SAUCE--------------------------------
    1 ts Capers, drained
    12 Pitted kalamata olives;
    - halved
    12 Sun-dried tomatoes; drained,
    - cut up (olive oil packed)
    28 oz Can cut tomatoes w/basil
    1/3 c Chopped parsley
    Salt & pepper

    Sprinkle fish lightly with salt and pepper and coat with
    flour.

    Preheat oil in large pan over medium heat. Add fish and
    cook for 1 1/2 minutes on each side. (A little longer [2 -
    2 1/2 minutes] for the Orange Roughy which is thicker and
    denser than the others, according to the demo man.)
    Transfer to paper towels to drain while preparing the
    sauce.

    Add capers, olives, sun-dried tomatoes and canned tomatoes
    to the frying pan. Simmer until heated through, about 2-3
    minutes.

    Add fish back into pan with sauce; simmer two minutes.
    Transfer to platter and garnish with parsley.

    Shirley and I had full servings of this at a demo at a
    local Wegman's Supermarket. It was superb. The demo guy
    agreed with Kathy Pitt's caution to be <very> careful
    about overcooking fish. Kathy, Chief Cook at Texas Red
    Lobster, wrote me once here about the best way to order
    fish: ask the waiter to slowly walk the raw fish on a
    platter through the hot kitchen and serve it.

    Yes but both buildings looked relatively new when we moved to WF in
    2009. As I said, they're not that far apart from each other, both
    outside of the main part of town, both just off the main road going thru
    the area. HD is in a development with other stores; Lowe's sits by
    itself, just down the road a bit from Wegman's.

    We carry 2 tanks on the tongue and a 3rd in the back of the truck. When
    we had the Focus, I think we just carried 2 tanks, none inside the
    vehicle. Our camper is small enough that there's no room for an extra compartment for propane like your brother's 5th wheel.

    Yes, all that has to be considered. Getting some maintenance done on the
    truck this week--oil change and tire rotation--in anticipation of
    leaving for the trip out west. When we get back from that, we'll need

    OTOH, I do like them and have no problem with them so I'll enjoy them
    now & then. Ordered them as a side to scrambled eggs recently and mixed
