    [brag mode on] My great grandson Azlind Oliver LeBlanc has turned
    one and like most babies his age he is becoming fairly handy with
    forks and spoons. But this kid has also mastered chopsticks! His
    father uses them a lot and the little boy watched, imitated and
    taught himself how. [brag mode off]

    Mackerel is such an oily, strong tasting fish that it is not to
    everyone's tastes but for those those who do like it, I came across
    this while researching callaloo.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Jamaican Mackerel Rundown
    Categories: Caribbean, Fish, Sauces
    Yield: 8 Servings

    2 lb Salted/Pickled Mackerel
    2 md Coconuts
    8 c Water
    1 md Onion, sliced
    3 Cloves Garlic, chopped
    1 md Tomato, chopped
    2 Stalks escallion, chopped
    3 sl Scotch Bonnet pepper
    1 ts Dried Thyme

    Whether you call it Mackerel Rundown or Rundown Mackerel, the term
    rundown is used to describe a thick sauce made of coconut milk
    boiled down with seasonings until it begins to form a custard. You
    can use any salted fish, like cod or herring to make a tasty
    rundown.

    Prep Mackerel (to reduce salt): Remove the bones from Mackerel. Cut
    fish into 2-inch to 3-inch pieces and place in bowl. Pour boiling
    water over fish until covered; let sit for a half hour. Drain water
    and set fish aside.

    Make Coconut Milk: Remove flesh from coconuts and cut into small
    pieces. Using blender, in four batches, puree coconut with 8 cups of
    water. Use strainer to remove and squeeze coconut from water.

    Rundown: Pour coconut milk into saucepan and bring to boil. Stir
    milk using medium high heat until it reduces to a thick custard and
    oil is visible on top. Add onion, garlic, tomato, escallion, scotch
    bonnet pepper and thyme to pan and stir. Saute seasonings in
    coconut custard until onions are transparent. Add fish, skin side
    down, to pan and cover with sauce. Turn heat to low and simmer for
    about 10 minutes until fish is cooked.

    Serve hot with boiled green bananas and boiled dumplings.

    The peaches don't fall far from the tree it seems. As I recall his mom
    was quite precocious. Bv)=

    2 c Flour
    2 1/2 ts Baking powder
    3/4 ts Salt
    5 tb Shortening
    3/4 c Milk

    MMMMM----------------------------PLUS---------------------------------
    1/4 c Brown sugar
    1 lg Egg
    1/2 ts Vanilla
    Raisins

    Like cookies. Mix. And add two handfuls sugar.... and an
    egg....and some vanilla.... just one cap.... not too
    much.... make puppy shapes.... with hands.... add raisins
    for eyes and ears and mouth. If you really like raisins,
    add more for toes and belly button. Bake brown. Be
    careful; oven hot.

    It's bread not cookies. Good for you....eat lots.

    been learning how to make Filipina dishes and is now better at it
    than her MIL. Even Patrick admits it. Her source for recipes is
    Pinterest! It's killing Facebook which killed Yahoo Group which
    killed FIDO. The woman whose recipes she trusts has over 900,000
    followers worldwide!

    Title: Calderetta
    Categories: Filipino, Beef, Goat, Offal, Lamb
    Yield: 5 servings

    500 g Beef round, cubed
    1/4 c Vinegar
    10 Peppercorns, crushed
    1 ts Salt
    2 cl Garlic, crushed
    1/4 c Oil
    1 c Onion, sliced
    1/2 c Tomato sauce
    2 c Boiling water
    1 c Red or green pepper, strips
    1 Bay leaf
    1 Dash of hot sauce
    1/3 c Liver spread

    Marinate beef in mixture of vinegar, peppercorn, salt and crushed
    garlic for 1 1/2 - 2 hours. Fry pieces of beef in cooking oil. Add
    onions and saute until tender. Pour in tomato sauce and boiling
    water. Add the green pepper, bay leaf and hot sauce as desired.
    Cover and simmer until meat is tender. Blend in liver spread. Cook
    5 minutes moore.

    Yahoo Groups didn't kill FIDO .... and didn't survive the effort. Some
    time ago (October 2020) AT&T/Yahoo drove the final nail into the coffin
    with the announcement "We must sometimes make difficult decisions
    regarding products that no longer fit our long-term strategy as we hone
    our focus on other areas of the business, starting Dec. 15, the Yahoo
    Groups website will be inaccessible as will its services, including
    sending and receiving emails." (IOW - there's no $$$ in it anymore.)

    My only (former) Yahoo group in which I still participate has moved to "groups.io" Which seems to be humming along nicely. Google also has its
    "Google Groups" which, AFAIK is still available.

    FIDO is as close as I feel I need to be in "social media". The only use
    I have for Pinterest is in going through it when chasing a recipe. So I
    am "registered" but that's about it.

    Title: Chicken Or Pork Adobo
    Categories: Filipino, Poultry, Pork
    Yield: 8 Servings

    1 c White or cider vinegar
    1 c Water
    2 tb Garlic; peeled, crushed
    2 ts Salt
    2 Bay leaves
    1/2 ts Fresh ground black pepper
    3 lb Chicken; cut up *
    +=OR=+
    3 lb Pork butt; in cubes *
    Soy sauce
    Oil

    * Or one and one-half pounds of each

    Add vinegar, water, garlic, salt, bay leaves and pepper
    into a large casserole. Bring to a boil. Add the meat,
    cover and bring to a boil. Simmer and cook for about 30
    minutes. Sprinkle liberally with soy sauce and cook for
    an additional 10 minutes.

    Remove meat and reduce sauce. Remove sauce to a bowl. Put
    oil in casserole and brown cooked meat. Drain oil from the
    casserole and return the reduced sauce back with the meat.

    Serve with rice.

    I've used it for finding wood carving ideas. Sometimes patterns are shared. Other then that facebook for the memes and pictures of grand kid, and the BBS for actually talking about things.
