    Title: Loaded Bbq Baked Potato Casserole
    Categories: Potatoes, Cheese, Poultry, Dairy, Pork
    Yield: 6 servings

    24 oz Pkg refrigerated mashed
    - potatoes
    8 oz Shredded sharp Cheddar;
    - divided
    4 oz Shredded Monterey Jack
    - w/peppers
    4 oz Cream cheese; in cubes
    1/2 ts (ea) salt & black pepper
    1 c Sour cream
    2 Cooked chicken breasts;
    - shredded
    1/2 c Barbecue sauce
    6 sl Precooked bacon; crumbled

    Set oven @ 375-|F/190-|C.

    Coat a 7" x 11" baking dish with cooking spray.

    In a large microwaveable bowl, stir together mashed
    potatoes, 1 cup Cheddar cheese, the Monterey Jack
    cheese, cream cheese, salt, and pepper. Cover and
    microwave on HIGH 4 minutes. Stir in sour cream.

    Spoon potato mixture into prepared baking dish. Arrange
    chicken evenly over potatoes, drizzle with barbecue
    sauce, sprinkle evenly with bacon, and the remaining
    Cheddar cheese.

    Bake 15 minutes, or until casserole is thoroughly heated
    and cheese is melted.

    Title: Cleo's Potato Salad
    Categories: Potatoes, Pork, Vegetables, Dairy
    Yield: 12 servings

    3 1/2 lb Red potatoes; in 1" cubes
    6 sl Bacon; chopped
    1/4 c Sugar
    1 tb A-P flour
    1/2 c Water
    1 lg Egg; lightly beaten
    3 tb Cider vinegar
    1 tb Grated onion
    1 ts Celery seed
    1 ts Salt
    1/2 ts Pepper
    1 c Heavy whipping cream;
    - whipped
    4 lg Hard-boiled eggs; chopped
    2 md Celery ribs; chopped

    Place potatoes in a large saucepan; cover with water.
    Bring to a boil. Reduce heat; cook, uncovered, until
    tender, 10-15 minutes. Drain; cool completely.

    Meanwhile, in a saucepan, cook bacon over medium heat
    until crisp. Remove with a slotted spoon; drain on paper
    towels. Remove all but 1 tablespoon drippings from pan.

    Stir sugar and flour into drippings until smooth.
    Gradually stir in water; cook and stir over medium-high
    heat until thickened and bubbly. Remove from heat. Stir
    a small amount of hot mixture into beaten egg; return
    all to pan, stirring constantly. Slowly bring to a boil,
    stirring constantly; remove from heat. Transfer to a
    large bowl; cool completely.

    Gently stir in vinegar, onion and seasonings. Fold in
    whipped cream. Stir in eggs, celery, potatoes and bacon.
    Refrigerate, covered, until serving.
