    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Picnic Potatoes
    Categories: Potatoes, Soups, Casseroles
    Yield: 10 Servings

    2 lb Frozen hash browns
    1/2 c Butter; melted
    2 cn Cream of chicken soup
    2 c Cheddar cheese; grated
    2 c Sour cream
    1/2 c Onion; chopped
    S & P
    Onion granules
    Garlic granules

    Mix everything together. Place into a greased 13" X 9"
    or 3 qt. casserole dish. Mix 2 cups of crushed corn
    flakes with 1/4 cup melted butter. Spread on top of
    casserole.

    Bake at 350+|F/175+|C for 45 minutes to 1 hour.

    left over to keep at home.

    Title: Picnic Special
    Categories: Beef, Grains, Vegetables, Breads
    Yield: 12 Servings

    2 lb Ground beef
    1 c Quaker Oats; uncooked (quick
    - or old-fashioned)
    1 3/8 oz Onion soup mix (1 packet)
    1 c Milk
    1 Loaf Vienna bread; in 24
    - slices
    12 sl Tomato slices
    Leaf lettuce
    6 sl Process American cheese;
    - halved

    Combine ground beef, oats, soup mix and milk thoroughly.
    Shape to form 12 flat patties. Place in broiler or over hot
    coals about 5 minutes. Turn and cook about 5 minutes longer.

    To serve, place a tomato slice, leaf of lettuce, half a
    cheese slice and a hamburger between 2 slices of Vienna
    bread. Reassemble loaf in bread basket.

    Title: Picnic Beans
    Categories: Beans, Vegetables, Pork
    Yield: 16 Servings

    64 oz Showboat Pork & Beans
    1 c Catsup
    1/3 c Brown sugar
    1/2 c Bell pepper; seeded, chopped
    1/4 c Sweet onion
    1 c Light molasses
    2 ts Prepared (yellow) mustard
    1 ts Salt
    1/2 c Bacon; chopped

    Combine ingredients in a large casserole. Bake @ 375+|F
    for 30 minutes. Stir well and return to oven to bake @
    225+|F for 7 hours.

    Serve hot or at room temperature

    Title: Picnic Kabobs

    Yield: 6 Servings

    1 1/2 lb Ground beef
    3/4 c Quaker Oats; uncooked, quick
    - or old-fashioned
    1 Egg
    1 ts Salt
    1 tb Worcestershire sauce
    1/4 c Tomato sauce
    18 md Stuffed olives
    4 md Tomatos; in 16 wedges
    2 Bell peppers; in 16 pieces
    8 sm Cooked potatoes
    8 Buttom mushrooms
    French dressing

    Combine ground beef, oats, egg, salt, Worcestershire
    sauce and tomato sauce thoroughly. Shape meat mixture
    around olives to form 18 meat balls.

    Alternate 3 meat balls, 2 tomato wedges, 2 green pepper
    pieces, 1 potato and 1 mushroom on six 12-inch metal
    skewers. (To be sure meat balls stay on skewers, thread
    through the olives in the center.) Brush kabobs with
    French dressing.

    Place in broiler or over hot coals about 6 inches from
    source of heat. Cook about 8 minutes. Turn; brush again
    with French dressing. Cook about 4 minutes longer or
    until done.

    Title: Alabama Picnic Chilli

    Yield: 12 Servings

    5 lb Coarse-ground beef
    1 lg Onion; diced fairly fine
    1/2 c Green bell pepper; diced
    2 tb GFS or Minor's beef base
    1 ts Cocoa (Nestle or Hershey) *
    5 ts Powdered garlic granules
    1 tb Ground cumin
    48 oz Can tomato juice
    5 tb + (3 ts) chilli spice
    1/2 ts Fresh black pepper

    * NOT the hot chocolate drink mix with sugar and other
    nasties that don't go well in my chilli.

    Here is one of mine that is a good starting point for
    experimenting. I use my own chilli mix... but Gebhardt's,
    Mexene or Chilli Man will work pretty well. Ray's Chilli
    owner says he is bringing out a line of chilli mix as soon
    as he finds a spice company to mix and package to his
    recipe. Apparently it has different requirements from using
    spices to can chilli.

    Combine the beef base, tomato juice, chopped veggies, cocoa
    and 4 teaspoons of powdered garlic in a dutch oven over a low
    (simmer) flame.

    Divide the hamburger into three more-or-less equal batches
    and brown it in a separate skillet. Add 1 teaspoon of chilli
    spice per batch. When browned and crumbled drain excess fat
    and add to dutch oven. Repeat until all ground beef is in
    the chilli pot. Add the black pepper to the chilli pot.

    Stir in 1 tablespoon per pound of meat of the chilli powder
    (5 Tb for this batch). Cover pot and let simmer, stirring
    once in a while. When the onions and peppers are cooked
    (about 1 1/2 hr) taste the pot.

    You will probably find that you'll need to add the remaining
    tablespoon of garlic powder and the tablespoon of ground
    cumin. You may also want to add an additional tablespoon of
    chilli powder at this time. Trust me on the garlic and
    cumin. It adds the final kick.

    For those desiring a hotter product add cayenne until your
    lips turn numb and your sinuses drain if you like. I made
    this batch extra-mild in deference to picnic attendees who
    don't handle heat real well. Sadly, Maya Houston thought it
    was still too hot after she tasted a spoonful.

    As noted - this recipe starts extra mild as a base line in
    deference to the non chile heads for whom I made it. Add
    heat or chipotles to suit yourself. Black or pinto beans
    will work - add them AFTER the chilli is cooked.
