    Title: Garlic Skillet Rice
    Categories: Rice, Vegetables, Sauces
    Yield: 5 servings

    3 1/3 c Water
    1 1/2 c Long-grain; uncooked
    2 tb Oil
    3 cl Garlic; minced
    2 lg Tomatoes; in chunks
    2 Scallions; sliced
    1 ts Salt
    1/4 ts Black pepper
    1/4 c Ranch salad dressing; more
    - to taste

    In a large saucepan over high heat, bring water to a
    boil. Add rice, then reduce heat to low and simmer 20
    minutes, or until water is absorbed; set aside.

    In a large skillet over medium heat, heat oil; saute
    garlic 2 to 3 minutes. Add tomatoes and saute 1 to 2
    more minutes.

    Add rice, scallions, salt, and pepper; mix well. Add
    salad dressing and mix until heated through. Serve
    immediately.

    Title: Rigatoni Bolognese
    Categories: Beef, Pasta, Vegetables, Herbs
    Yield: 6 servings

    1 lb Ground beef
    1/4 ts Salt
    1/2 ts Black pepper
    2 Carrots; shredded
    1 Onion; chopped
    1 lg Bell pepper; chopped
    1 tb Chopped garlic
    30 oz (2 cans) tomato sauce
    1 ts Dried oregano
    1/2 lb Rigatoni pasta
    2 tb Slivered fresh basil

    In a large pot over medium-high heat, brown beef with
    salt and pepper. Drain off excess liquid then add
    carrot, onion, green pepper, and garlic. Cook 4 to 5
    minutes, or until vegetables are tender, stirring
    occasionally.

    Add tomato sauce and oregano, loosely cover, and reduce
    heat to low. Simmer 20 minutes, stirring occasionally.

    Meanwhile, cook pasta according to package directions;
    drain and place in a large serving bowl.

    Stir basil into sauce and pour over pasta, toss to coat,
    and serve immediately.
