    Title: Old-Fashione Chicken & Dumplings

    Yield: 6 servings

    2 Celery ribs; sliced
    2 Carrots; sliced
    8 c Chicken broth
    1/2 ts Poultry seasoning
    1/4 ts Black pepper
    3 c Shredded cooked chicken

    1 c Biscuit baking mix
    5 tb Milk
    2 ts Chopped fresh dill

    Coat a soup pot with cooking spray and heat over
    medium-high heat. Add celery and carrots; sauté 5 to 6
    minutes or until tender. Stir in broth, poultry
    seasoning, and pepper; bring to a boil. Stir in chicken.

    Meanwhile, in a medium bowl, make dumpling batter by
    mixing together biscuit baking mix, milk, and dill until
    well combined. Drop 6 equal spoonfuls of dumpling batter
    into boiling mixture. Reduce heat to low and simmer 5
    minutes; cover and cook an additional 8 minutes or until
    dumplings are cooked through. Serve immediately.
