MAKE YOUR OWN PESTO; Making your own fresh pesto is so worth the time
and not much effort. That scent of fresh basil pounded with garlic,
creamy pine nuts, Parmesan and olive oil is hard to beat. You can freeze
it too but add the cheese once it's thawed. Make a big batch, then
freeze portions in ice cube trays.

2 c Dandelion greens
1/2 c Olive oil
1/2 c Grated Parmesan cheese
2 ts Crushed garlic
pn Red pepper flakes; generous
Place dandelion greens, olive oil, Parmesan cheese, and
garlic in a food processor; blend until smooth. Season
with salt and red pepper flakes.
