Bridgeport, Illinois - Since there are so many people in Illinois with
Polish roots, we knew we had to share a recipe from the Old Country for
this hometown favourite.

Title: Oniony Polish Sausage

Yield: 6 servings
2 tb Oil
1 c Sliced onion
10 3/4 oz Can French onion soup
1 tb White vinegar
1/4 ts Black pepper
1 lb Smoked Polish kielbasa
15 oz Can whole potatoes; drained
14 1/2 oz Can sliced carrots; drained
In a large skillet, heat oil over medium-high heat and
cook onions about 5 minutes, until tender.
Stir in soup, vinegar, and pepper.
Pierce skin of kielbasa several times with a fork, then
add it along with potatoes and carrots; reduce heat to
low, cover, and cook 15 minutes or until heated through.
Serve immediately.
