    Hi Shawn,

I pulled a pork tendrloin out of the big freezer yesterday. When it's
all thawed (probably Tuesday), I'll try it with a recipe I found in a

I have one in the freezer for this Sunday coming up. We're hopeful
Andrea is feeling well enough by then to have the kids over as it's
    been about 3 weeks.

Hopefullly she will be better. I'm to the stage where I'm feeling good
enough to tackle some new things but still leaving others be. Tonight's
supper will be roasting a blue hubbard squash, baking some chicken
thighs (can do both at the same time) and adding something else, maybe
the left over kasha from last night.

cook book from a camp Steve worked at one summer. Basically baked with
a dry onion soup rub, red wine and apple juice (we got cider). I'll let

At the bottom is the way I did the last one and it was a hit.

It does look good. Our pork turned out good, worthy of a repeat. Cook
book times were way off so it delayed supper by about half an hour.

like this. I'll probably do chicken soup tomorrow; we've a meaty
carcass that needs to be used in the fridge.

I've got too many carcass in the freezer now for soup and too many
    soups to make more. lol

Cook them down in big batches, pick the meat off the bones and freeze in
maybe 2 cup quantities. Freeze extra stock but keep some in the fridge
for immediate use. The chicken can be used in various ways; I have some
chicken casserole recipies that I used "picked off the bones from stock
    making" chicken.

Something to think about. We usually smoke shoulders, do pulled pork bbq
    with them.

    Yield: 6 Servings

    1 1/2 lb Ground beef
1 md Onion; fine diced *
1 md Bell pepper; cored, fine
    - diced *
    2 ts Minced garlic
3 tb Red Gold sriracha ketchup
    1 tb Tomato paste
    1/2 c Beef broth
1 tb Brown sugar (highly opt)
1 ts Chilli spice mix; you choose
    1 ts Yellow (French's) mustard
    1 ts Worcestershire sauce
    pn (big) red pepper flakes
1/2 ts (ea) salt & black pepper
    6 lg Seeded hamburger buns;

Cook the ground beef, onion and bell pepper in a large
skillet over medium heat, until beef is crumbled and
cooked through. Drain off any excess fat and return
skillet to stove top over medium heat.

Add in the garlic and cook until fragrant, about 30
seconds. Add in the remaining ingredients and stir to
    combine.

Let mixture simmer on low heat for about 10 minutes, to
allow flavors to blend. Taste and adjust seasonings to
your taste preference if desired. (see tips)

Serve over a toasted bun. Enjoy!

    TIPS FOR ADJUSTING FLAVOR PROFILES:

More spicy - add in an extra pinch of red pepper flakes
or a few dashes of your favorite hot sauce

More smokey - double the chilli spice and a few extra
    dashes of Worcestershire sauce

More tangy - stir in a little Dijon-style mustard or
    add some Colman's mustard powder

    Hi Shawn,

Hopefullly she will be better. I'm to the stage where I'm feeling good

Not looking good. She had to call in sick again today, just none stop coughing. Dry unproductive cough. She's going to attempt to see
    family doc today.

Was she able to get in? When the bronchitis hit me earlier this month, I
called for a same day appointment with my doctor. Turned out the
practice wasn't seeing in person people with active symptoms but I could
(and did) do a video visit that afternoon. I recorded basic vitals a
couple of hours before to give him so he could compare with previous
visits. I'll be seeing him in person in a couple of weeks for a routine
visit and follow up on the bronchitis.

I don't think we've ever bought manwich. I tend to use tomato sauce and
my own spicing (onions, maybe garlic, chili powder, cumin, etc) for
    things like that.

When I cook down a carcasse I'll season the water with something like
Mrs. Dash or Bragg's seasoning and a bit of salt. Gives the meat (and
stock) a bit of flavor; if it's going to be soup, I'll add turmeric
after I've debone the chicken. Doing it before gets my fingers yellow.

Good; what about a prednisone burst (6 days, taking 6 the first day, 5
the second, etc until just one the final day)? That, in conjunction with antibiotics, will knock down the bronchitis for me.

Right! The soup was good; we'll be having more of it tonight. It has a

usually buy frozen veggies for it, used to get the mixed blend until we

    Hi Shawn,

Yes, and I got more done last night--started making a replacement belt
for a coat of mine. I think the original belt landed in a bag that went
to Goodwill after it fell out of the coat. This one will be sewn on to

That's happened to Andrea as well.

At least I know how to sew and make a replacement. (G) Couldn't quite
match the color of the coat but I came pretty close. Most people won't
    notice the difference.

Sounds good. We're going to do another seafood pancake tonight, don't
know if we'll use the same recipe or try a different one.

May be trying that shortly as they had some scalops and shrimp on sale plus we have lake perch in the freezer as well.

We ended up doing the pancake on Saturday--tried frying it in a
different pan, using part whole wheat pastry flour. It turned out good.
    (G)

The curry shrimp and calaloo N salt fish are my favorite.
So what kind of seasoning is on the calaloo salt fish?

To be honest I don't know, I will ask them when I'm in next, I don't
quite know how to describe it. Salty, Vegital, hint of spicy, pepper. Kind of like that...

Maybe a bit of Mrs. Dash? I also use a similar thing called Braggs
Seasoning, especially when I make stock.

She was able to find a belt at the sally ann that is close enough that
she could wear the coat again. (It looked funny without the belt)

We did shrimp and rice. Last night I made a batch of meatballs froze two
bags (8 per bag) and wipped up some pasta, a tomato sauce and done. ;)
My daughter came and stole some and we both ate some and have enough left
    for tonight.

I could have gone that route because my coat also looks funny unbelted
but figured I could make one just as easy. I have one partly done but I
think I'll do another one, just a bit wider. Bought the rest of the
bolt, only needing about 1/3 yard so I've got plenty to play with. First
one was a "OK, let me see how this is done". (G)

Sounds good. We're up with family now, staying with a niece. Last night
we went out to a brewpub--had a couple of schnizels on the menu. Thought
it was a good choice so we ordered them--cook doesn't know how to make schnitzel! They were over done, spazele was overdone and had cilantro
(!!!, WWTT) in it. OTOH, went to our favorite sushi place for lunch and
had, as usual, an excellent meal.
