1898 Writer O. Henry (William Sydney Porter) sentenced to 5 years in
prison for embezzling $854 from a bank reportedly to pay for his sick
wife's medical bills. Goes on to write many classics while in jail
including "Whistling Dick's Christmas Stocking".

Title: Whistling Dick's Marinated Chicken
Categories: Poultry, Fruits, Citrus, Vegetables, Herbs
Yield: 4 servings

1 c Unsweetened apple juice
1/2 c Sweetened shredded coconut
1/4 c Lemon juice
2 cl Garlic; minced
2 ts Curry powder
2 ts Salt
1/2 ts Chile flakes; crushed
4 (4 oz ea) boned, skinned
- chicken breast halves or
- thighs
1 tb Olive oil
1 1/4 c Water; divided
2 tb Cornstarch
1/2 c Fresh parsley; minced

In a small bowl, combine the first seven ingredients.

Pour half into a large resealable plastic bag, combine
the first seven ingredients. Add chicken; seal bag and
refrigerate for at least 8 hours. Cover and refrigerate
remaining marinade.

Drain marinade from chicken. In a large skillet over
medium heat, brown chicken in oil. Add reserved marinade
and 1 cup water; bring to a boil. Reduce heat; cover and
simmer for 25-30 minutes.

Combine cornstarch and remaining water until smooth;
gradually stir into pan. Bring to a boil; cook and stir
for 2 minutes or until thickened. Stir in parsley.

Yield: 4 servings.
