    00 July 1804 - DEADLY DUEL ENDS POLITICAL RIVALRY: US Vice President
    Aaron Burr and former Treasury Secretary Alexander Hamilton arrive at
    New Jersey's Palisades and proceed with a pistol duel after years of
    public rivalry. Hamilton fires into the air, but Burr shoots directly
    at Hamilton, felling him with a fatal bullet.

    MMMMM-------------------CORNED BEEF BENEDICT-------------------------
    1 English muffin; split,
    - toasted
    14 oz Can corned beef hash; heated
    2 Poached eggs
    1/2 c Hollandaise sauce

    MMMMM--------------------HOT BROWN BENEDICT--------------------------
    1 English muffin; split,
    - toasted
    2 sl (thick) roasted deli turkey
    - heated gently
    2 sl Fresh tomato
    4 sl Precooked bacon
    1/2 c "Investment" mornay; slowly
    - heated w/extra minced
    - turkey and bacon
    +=WITH=+
    1/4 c Sharp grated cheese stirred
    - in to emphasize the "Hot
    - Brown" aspect of the eggs
    - Derby style.

    MMMMM-------------------BLENDER HOLLANDAISE------------------------
    4 Egg yolks
    2 tb Fresh lemon juice
    1/2 ts Salt
    pn (generous) white pepper
    1 c Melted butter

    MMMMM-----------------KICKED UP MORNAY SAUCE-----------------------
    1 1/2 tb Unsalted butter
    1 1/2 tb Olive oil
    3 tb A-P flour
    1 c Milk
    1/2 sm Onion; peeled
    Bay leaf
    6 Black peppercorns; whole
    1 ts Chicken base
    1 ts Worcestershire sauce
    1 tb Dijon mustard
    Nutmeg
    1 c Shredded Parmesan cheese

    BLENDER HOLLANDAISE: Melt butter until foaming (not
    browned), add in a slow stream to egg yolks, lemon juice
    and seasoning in a blender cup base. Blend until foamy
    and thickened. Reserve in a thermos.

    KICKED UP MORNAY SAUCE: Heat unsalted butter and olive
    oil over low heat in a large saucepan. Whisk in flour
    and cook a few minutes. In a small sauce pan, heat milk,
    onion, bay leaf, and whole black peppercorns, over
    gentle heat, do not scald.

    Strain hot milk into a quart measuring cup (discard
    solids) add chicken base and stir to mix.

    Off the heat, stir the seasoned hot milk into the
    butter/oil/flour mixture. Back over low heat, cook
    slowly whisking all the time until thickened.

    Add Worchestershire sauce, dijon mustard, a generous
    scraping of nutmeg shredded parmesan cheese. Stir well,
    reserve.

    EGG POACHING: In a deep skillet of simmering water, add
    a tb of white vinegar to 3" of simmering water. Break in
    whole eggs and cook until just below a solid yolk
    setting. don't poach more than four eggs to control
    doneness. Whites firm and yolks runny is the goal. Use a
    slotted spoon to remove eggs from poaching liquid, drain
    well, before topping toasted English muffin.

    ASSEMBLY IN LAYERS. Corned Beef Benedict - Toasted
    muffins, Hot crumbled corn beef. Poached egg and spoon
    over hollandaise.

    Hot Brown Benedict - toasted muffin, slice of tomato,
    slice of turkey, poached egg, crisscross bacon slices,
    kicked up mornay sauce.
