    July 11 - National Blueberry Muffin Day

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Blueberry Muffins
    Categories: Muffins, Breads, Fruits
    Yield: 12 Servings

    2 c Whole wheat pastry flour
    3/4 c Unbleached white flour
    1 tb Baking powder
    1/2 ts Salt
    2 lg Eggs
    1 c Milk
    1/2 c Sunflower oil
    1/2 c Honey
    1/2 ts Vanilla extract
    1 1/2 c Blueberries

    Preheat the oven to 400+|F/205+|C. Butter the muffin tins.

    In a bowl, mix the flours, baking powder and salt together.

    In a mixing bowl, beat the eggs. Add the milk, oil, honey,
    and vanilla extract. Beat well. Add the dry ingredients and
    stir. Add the blueberries. Stir just enough to moisten; do
    not over mix.

    Fill the buttered muffin tins 2/3 full. Bake in the
    preheated oven for 20 minutes.

    Makes 12 muffins.

    UDD Notes: Recipe doubles well. Use paper muffin cups
    to line the muffin tin cavities and cut down on the
    clean-up.

    Title: Grandma's Berry Muffins
    Categories: Breads, Fruits, Desserts, Citrus
    Yield: 12 Muffins

    1/2 c Quick oats
    1/2 c Orange juice
    1/4 ts Baking soda
    1 c All-purpose flour
    1/2 c Whole wheat flour
    1/2 c Brown sugar
    1 1/4 ts Baking powder
    1/2 ts Salt
    1 lg Egg; beaten
    1/2 c Oil
    1 c Whole frozen raspberries
    - or blueberries

    MMMMM--------------------------TOPPING-------------------------------
    1/4 c Chopped pecans
    1/4 c Brown sugar
    1/4 ts Cinnamon

    Mix oats and orange juice together.

    Stir in brown sugar.

    Add beaten egg and oil.

    Sift dry ingredients together and stir in. (Do not over
    stir!)

    Add raspberries and lightly mix in.

    Put in muffin tins and add topping.

    Bake at 400++F/205++C for 18 to 20 minutes.

    Let cool and enjoy!

    Title: Mark & Mary's Moist Blueberry Muffins
    Categories: Cakes, Snacks, Fruits
    Yield: 12 Servings

    2 Egg whites
    3/4 c Sugar
    1/2 c Applesauce
    1/2 c Milk
    1 tb Maple syrup
    1 ts Vanilla
    2 c Flour
    1 tb Baking powder
    1/2 ts Salt
    1 1/4 c Wild Maine blueberries

    Set the oven to 375+|F/190+|C.

    Thoroughly grease a muffin tray with 12 large muffin
    cups and set aside until ready to use (I just use a
    nonstick muffin pan).

    In the bowl of an electric mixer, beat the egg whites
    until frothy. Add the sugar and beat for 1 minute. Stir
    in the applesauce, milk, maple syrup and vanilla.

    Add the flour, baking powder and salt and mix just until
    the dry ingredients are moistened. Gently fold in the
    blueberries. Spoon the batter into the greased muffin
    cups and bake in the preheated oven for 20 - 25 minutes
    or until golden and the center springs back when gently
    pressed.

    Remove the muffins from the oven and set on a metal
    cooling rack for 10 - 20 minutes. Using a knife, cut
    around each muffing and gently ease them out of the pan,
    making sure they don't fall aparat (these need to be
    cool to remove from the pan). (I use a small plastic
    knife since my pan is nonstick, they are easy to take
    out when lukewarm). Set on the cooling rack.

    Title: Jordan Marsh's Blueberry Muffins
    Categories: Breads, Fruits
    Yield: 12 servings

    1/2 c Softened butter
    1 1/4 c Sugar
    2 lg Eggs
    1 ts Vanilla extract
    2 c Flour
    1/2 ts Salt
    2 ts Baking powder
    1/2 c Milk
    2 c Blueberries; washed, drained
    - picked over
    3 ts Sugar

    Set the oven @ 375+|F/190+|C.

    Cream the butter and 1 1/4 cups sugar until light.

    Add the eggs, one at a time, beating well after each
    addition. Add vanilla.

    Sift together the flour, salt and baking powder, and add
    to the creamed mixture alternately with the milk.

    Crush 1/2 cup blueberries with a fork, and mix into the
    batter. Fold in the remaining whole berries.

    Line a 12 cup standard muffin tin with cupcake liners,
    and fill with batter. Sprinkle the 3 teaspoons sugar
    over the tops of the muffins, and bake at 375 degrees
    for about 30-35 minutes.

    Remove muffins from tin and cool at least 30 minutes.
    Store, uncovered, or the muffins will be too moist the
    second day, if they last that long.
