    And the latest new thing, air fryers, don't tempt me at all.

    For us, the Air Fryer and the Toaster Oven are the most used appliances
    in our current kitchen. Both are good for heating up left overs where
    you want to restore crispness that a microwave would destroy. Since
    most of our meals are in the restaurants here, we don't use either one
    as much as we used to. During Covid, the restaurants were closed and
    food was delivered to the shelves outside the door. Some folks probably
    just stuck the container with the protein, and two sides into the
    microwave. Gail was much more creative about how to heat up the foods according to what was best for each type.

    Before we moved here, the air fryer was also in frequent use so as to
    produce items with crispness but without frying in oil. It worked quite
    well there.


    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Cheesy Potatoes
    Categories: Easy, Tested, Casserole
    Yield: 4 Servings

    1 pk B.C. Au Gratin Potatoes
    1 1/2 c Boiling water
    3/4 c Sour cream
    1/2 c Milk
    2 tb Butter
    1/4 c Chopped bell pepper
    - red or green
    1/4 c Sliced green onions
    1/2 c Shredded cheddar cheese

    Preheat oven to 350. Spray a 1 1/2 quart glass baking dish with
    cooking spray (I Used 8 x 8 glass casserole)

    In large bowl, mix potatoes, sauce mix and boiling water. Stir in
    sour cream, milk, butter, bell pepper and 1/8 cup of the onions.
    Spoon into baking dish.

    Bake uncovered 35 - 40 minutes. Sprinkle with cheese and the
    remaining onions, return to the oven and bake another 5 to 10 minutes
    until casserosle is bubbly around the edges and potatoes are tender.

    Let stand for 5 minutes before serving.

    This recipe can easily be doubled and should fit into a 9 x 13 inch
    glass baking dish.

    Tested 10/17/09 - very nice tang to the potatoes. Would go with any
    meat. Will do again. 5/4/15 - Made again and served with baked ham.
    This is a keeper, easy to do and very flavorful.

    Would make a great pot luck side dish :-)

    Title: Dirty Dave's Tempura Mushrooms
    Categories: Five, Breads, Mushrooms, Appetisers
    Yield: 7 Servings

    5 tb A-P flour
    3 c Aunt Jemima's Deluxe easy
    - pour pancake batter mix *
    1/4 ts Baking soda
    3 1/2 c Club soda; room temp **
    1 1/2 c Water
    1 lb Button mushrooms; halved if
    - large

    * or Aunt Pajamas copycat mix (separate recipe)
    ** Beer may be used as well - but the flavour wiil
    be changed.

    Combine the flour pancake mix and baking soda in a
    deep bowl. Stirring constantly with a whisk or spoon
    pour in the club soda and water in a slow stream and
    continue to stir until the mixture is a smooth thin
    cream.

    Strain the batter through a fine sieve set over a
    clean bowl pressing down hard on any lumps with the
    back of a large spoon.

    Dip msuhrooms in batter and drop into the deep-fryer
    or fondue pot with oil at 350+|F-375+|F/175+|C-190+|C

    Cook until batter is a nice golden brown and crispy.

    We use ours sometimes... It's part of my instant pot duo crisp so It
    doesn't take up more room. ;) It does come in handy for crispy food
    without a lot of oil or the stink of heating up fry oil etc.

    Title: July 4th Blueberry Pie
    Categories: None
    Yield: 1 Servings

    4 c Fresh blueberries (up to 5)
    1 c Sugar
    1/2 c Sifted all-purpose flour
    1/4 ts Salt
    1/4 ts Nutmeg (or cloves if you
    -prefer)
    1/2 ts Ground cinnamon
    3 tb Butter or margarine
    1 Double (10 inch) pie crust

    Stem and wash berries thoroughly; drain well. Place in large bowl and
    sprinkle with next 5 ingredients; toss to mix. Roll out bottom crust
    and put in 10 inch deep dish pie pan. Spoon blueberry mixture into
    pan and dot with butter. Place top crust over blueberries. Trim if
    necessary. Brush top with about 1 Tbsp. milk and sprinkle with 1/2
    tsp. sugar. Make a few slits in top to vent. Refrigerate about 10
    minutes while preheating oven. Place pie pan on cookie sheet. Bake at
    425 for 15 minutes; reduce heat to 350 and bake 30 minutes longer.
    Cool at least 1 hour before serving. Serves 10-12.

    1 1/4 c Cranapple sauce
    1 tb Powdered buttermilk(saco)
    2 tb Margarine
    1 tb Sugar
    1/2 ts Salt
    3 c Bread flour
    2 1/2 ts Yeast

    MMMMM-----------------------CRANAPPLESAUCE----------------------------
    1 1/4 c Cranberries
    4 md Golden delicious apples*
    1 ts Ginger root
    1/4 ts Cinnamom
    1/2 ts Grated zest of lemon
    1/2 c Sugar +
    2 tb Water

    Put all in machine sweet bread cycle if you have it.

    CRANAPPlESAUCE *peeled and diced (1/2 inch) put water and sugar in a
    lg heavy saucepan and place over high heat. Cook stirring until sugar
    is dissolved. Add apples cover stir frequently cook 5 minutes then add
    cranberries cook 15 to 20 minutes till cranberries pop and apples are
    soft then mash with potato masher will still be slightly lumpy add
    spices and zest cook another 5 minutes for flavor to blend. Cool for
    putting in the bread, sauce will keep in fridge for 3 days makes 3
    cups also can be served warm with dinner

    NOTE: This is a WET dough

    An air fryer would be compact, quick, efficient and probably not
    overheat a kitchen as much as a range's oven on a summer day but I
    manage quite well with a toaster oven for small thin items and my
    stove (just conventional not convection, but it goes up to 500 F)
    for large ones.

    I lightly coat my oven "fried" foods with an oil spray. I don't buy
    Pam but use a refillable, hand pumped, stainless steel sprayer.

    4 Chicken breast halves;
    skinless, boneless, cut into
    1 inch cubes
    30 oz Jar spaghetti sauce
    1 md Eggplant; peel; coarse chop
    2 Tomatoes; coarse chop
    2 sm Zucchini; sliced
    1 Green bell pepper; 1" pcs
    1 lg Onion; chopped
    3 cl Garlic; minced
    1 ts Dried basil leaves
    1 ts Dried oregano leaves

    In large bowl, combine all ingredients; mix well. Pour into 3-1/2
    to 4 qt crockpot. Cover; cook on LOW for 8 to 10 hours or until
    chicken is tender and no longer pink.

    colours and I have to navigate back to the Scrabble where I am allowed

    a cantaloupe. (If you don't have your china clippers yet you may want
    to omit the diced celery I put in there for crunch. It's had on the

    Toss/mix all ingredients except avocado and paprika.

    If making sandwiches lettuce leaves are recommended.

    add 6 drops blue food coloring to the liquid and omit blueberries.

    Title: Dave's Pizza Sauce
    Categories: Sauces, Vegetables, Herbs, Chilies
    Yield: 1 Pint plus

    3/4 c Chopped onion
    1/2 c Chopped bell pepper
    2 cl Garlic; minced
    1 tb Olive oil
    14 1/2 oz Can diced tomatoes
    8 oz Can tomato sauce *
    1 Turkish bay leaf
    1 tb Snipped fresh basil
    +=OR=+
    1 ts Dried basil; crushed
    1 tb Snipped fresh oregano
    +=OR=+
    1 ts Dried oregano; crushed
    1 ts Fennel seed; crushed
    1/2 ts Sugar (opt)
    1/2 ts Red (cayenne) pepper
    1/2 ts Chilli spice mix

    * For a really zippy sauce use El Pato tomato sauce,
    available in the Latino aisle of many markets.

    Cook onion garlic and bell pepper in oil. Stir in
    remaining ingredients. Bring to boiling. Reduce heat;
    simmer, uncovered, for 35 to 40 minutes or to desired
    consistency, stirring occasionally. Discard bay leaf.

    Makes 2 1/2 cups

    I believe I told you in a private message on the BBS but I can tell you
    here: in SyncTerm, in the "Edit Directory Entry" window, add ";y" to the end
    of your username in the "Username" field. For example, my username is "Sean Dennis;y". Works perfectly with Alt-L.

    Side note: I got kicked out of the BBS last night on the Web side of things also. I am thinking it's some sort of issue with the virtual machine's handling of being on a bridged NIC. I will work on trying to shoehorn the
    BBS onto my server that I have here if I can get ArcaOS to install on it.

    Used to be. That place folded up several years ago because someone
    supposedly got food poisoning from there and threatened to sue so the store folded up like a house of cards. I miss that place because they took SNAP
    so I could get a good pizza there.

    Title: English Muffin Pizza
    Categories: Italian, Syd's book, Pizza
    Yield: 3 servings

    6 English Muffins
    4 oz Sliced Pepperoni
    6 oz Monterey Jack Cheese
    6 oz Pizza Sauce
    Sliced Olives
    Chopped Onion
    Diced Green Pepper

    Place English muffin halves on a cookie sheet. Spread each half with
    enough pizza sauce to cover generously. Put 3-4 slices of pepperoni
    on each half and then place a generous portion of shredded cheese on
    top of each pizza. Place in a 350oF oven for approximately 15
    minutes. Serve hot. From: Syd's Cookbook.
