    Title: Coronation Chicken
    Categories: British, Curry, Chicken, Wine, Dairy
    Yield: 6 Servings

    Cooked chicken meat cut into
    Bite-size pieces
    1 tb Oil
    2 oz Finely chopped onion
    1 tb Curry powder
    1 tb [heaping] tomato puree
    1 c Red wine
    1/2 c Water
    1 Bay leaf
    Salt, sugar & pepper to
    Taste
    2 sl Lemon
    Lemon juice to taste
    2 tb Apricot jam
    2 c Mayonnaise
    3 tb Lightly whipped cream

    This dish was created in 1953 for H.M. Queen Elizabeth's
    Coronation.

    Heat oil in frying pan, add onion and cook gently for 3 to 4
    minutes. Add curry powder and cook for a further 2 minutes. Add
    tomato puree, wine, water and the bay leaf. Bring to the boil,
    add salt and sugar to taste, pepper, lemon and lemon juice. Simmer
    uncovered for 5 to 10 minutes. Cool, remove lemon slices and bay
    leaf. Gradually add to mayonnaise and season with apricot jam.
    Adjust seasoning, adding a little more lemon juice if necessary.
    Stir in whipping cream. Mix the sauce with the chicken meat and
    serve. Excellent with cold rice and fresh peas.

    Other versions call for pineapple, dried currants, raisins or
    sultanas, or seedless grapes instead of apricot jam.

    Can be served cold as a chicken salad sandwich filling.- JW)

    I have discovered the joys of my slow cooker. It is a rather old but
    useable Rival Crock-Pot (the crock doesn't separate from the heater so it is fun to clean sometimes). I have been putting four bone-in chicken breasts
    in for about three hours on high and the meat just falls off the bone. I
    am using a modified recipe I found on the Web that uses butter, salt, dried parsely, garlic powder, black pepper, onion powder, and paprika for a
    seasoning rub.

    The recipe was for boneless and skinless chicken breasts so I have had to triple the amount of seasoning to get it right. Sometime soon I will MM my recipe to share. I love that I can eat the chicken without any issues even without teeth. :D

    Title: Crock Pot Beef Stroganoff
    Categories: Crockpot, Beef
    Yield: 1 Servings

    1 1/2 lb Round steak
    4 tb Margarine
    2 cn Cream of mushroom soup
    1 ts Paprika
    1 c Onion; chopped
    1/2 c Water
    1 c Sour cream

    Cube round steak. Put steak in crock pot with remaining ingredients.
    Salt and pepper to taste. Cook on high 1 hour then low 4 to 6 hours.
    Serve with noodles, rice or mashed potatoes. Posted to

    YIKES! $130 scoots for a freaking crock-pot? I've got a range of them
    from 1 1/2 quart to 6 quart. But, none have wi-fi/phone crontrols. My
    favourite is still the "casserole" crockpot especially for going chuck

    Title: Crock Pot Roast
    Categories: Beef, Vegetables
    Yield: 6 Servings

    3 lb Chuck roast; trimmed
    1 pk Onion soup mix
    1 md Onion; sliced
    1 sm Carrot; in 3 pieces
    2 Ribs celery; chopped
    1 cl Garlic; minced
    2 sm Red potatoes

    Place the meat into the crockpot, then the veggies;
    sprinkle the onion soup mix over the top. Cover and
    cook on LOW for 8-10 hours or until meat is tender.

    Once the meat is done, if you want to thicken the gravy,
    remove the meat and veggies from the pot and place them
    on a serving platter.

    Mix together 2 tablespoons flour and 2-3 tb water to
    make a paste; whisk the paste into the hot liquid until
    thickened. You may want to put the temperature on HIGH
    when you make the gravy.

    I always make a big roast and freeze the leftovers or
    make other dishes with it (burritos, noodle casseroles,
    enchiladas, etc).
