    In the financial and business news these days:

    "'Unprecedented' Sriracha Sauce Shortage May Last for Months:
    Huy Fong Foods Inc., has been forced to suspend production of its
    iconic spicy sauces, Sriracha, Chili Garlic and Sambal Oelek, due to
    a lack of chili peppers caused by several spiraling events,
    including unexpected crop failure from the spring chili harvest,
    due to weather conditions

    Extreme weather, pandemic supply-chain snarls, Avian Flu, and
    Russia's invasion of Ukraine have all taken their toll on food
    production this year. Sriracha is just the latest item on a growing
    list of foods in short supply around the world, which includes
    chicken, popcorn, salami and fries."

    I have been stocking up on chicken (and turkey) in recent weeks
    whenever I come across specials and I have lots of home grown dried
    chilies from last year's bumper crop. Roslind grew banana peppers
    and cayennes and a friend of ours grew some habbies and ghost
    peppers. We've been trading pods, grinding them and making blends.

    But I'm going out tomorrow to grab a half dozen bottles of our
    favourite hot sauces.

    We tried some of their house made sushi rolls yesterday, as good as
    restaurant quality much much better then grocery store stuff.

    Also went on a poke through the freezers... Pork Snout, Beef Heart,
    pork ears, feet, chicken feet. You name it they have it. Their price
    on steak is cheaper then no frills as well. Chicken price is pretty
    much exactly the same. $14-$18 for a small chicken.

    I guess I'm not the only one who reads the commodity news in the
    financial section. Yesterday the shelves of Huy Fung sauces at
    Loblaws was stripped bare. Luckily I have one each of Sriracha and
    Chili Garlic sauce at home already. I did stock up on other hot
    sauces though: Frank's was on sale so I bought 4 bottles. I usually
    get the original but they make several kinds these days so I picked
    up one each of Extra Hot, Chili Lime, Sweet Chili and Buffalo
    sauces. I haven't tasted any of them yet; I do hope they don't
    disappoint.

    if you like Franks it's okay. I don't mind Frank's and will use it
    when it's on the table, but as mentioned my own creation is perfect
    for me.

    Huy Fung uses cayennes. I imagine that other brands will be in short

    It's not my favourite; I find that it's so mild that by the time
    you use enough to get the heat level you want the amount of salt
    and vinegar is overpowering. But the price was right and Roslind
    prefers milder sauces in small doses.

    Mine is mild at the base recipe. But you can easily spice it up.

    Title: Hot Sauce (Shawn's) **FAVORITE**
    Categories: Sauce/Gravy
    Yield: 1 Cups

    3 Ancho Chili
    2 Chipotle Chili
    4 Habanero Chili
    2/3 c Water
    1 T Spice Blend,Garlic, Onion,
    -Paprika, Hot Peppers
    1/4 t Salt
    1/2 c Apple Cider Vinegar
    1/2 t Pepper Blend,Black, Pink,
    -Sichuan

    [Note: Store in fridge - Good for about 3 weeks but it doesn't last long
    here. Peppers may change, sometimes I add a ghost pepper if I want
    more heat, sometimes less Ancho etc. Depends on the peppers. Could add
    Fruit if you want island style]
    1) Rehydrate the peppers in warm water
    2)Remove stems and seeds (If desired)
    3)Throw it all in a sauce pan and simmer for 4-5 minutes until peppers
    are soft
    4)Adjust thickness with more ACV. Taste for salt / spice / peppers etc
    and adjust.
    4)Blend the mess together in a small powerful blender

    Same here. Roslind had a good crop of cayennes last year. We have a

    I have done sorta similar things but didn't use ACV and I haven't had
    Sichuan pepper on hand for many years.

    I also like making chile oil. Here's one way, with some additional
    flavours added in:

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Rosemary Chile Oil
    Categories: Herb, Spice, Condiments, Chilies
    Yield: 2 1/2 cups

    1/4 c Crushed red chilies
    1 tb Dried rosemary
    1 Bay leaf
    1 1/4 c Olive oil
    1 1/4 c Vegetable oil
    3 Peppercorns

    Use a funnel and put herbs and spices into a wine bottle. Pour in
    oils and seal with plastic wrap. Place bottle upright in pot that is
    deep enough to allow most of bottle to be submersed and not float. (I
    use my tall and narrow asparagus steamer) bring water to simmer and
    process for 1 hour. Seal (corks work well) and let this oil sit for 2
    weeks for flavours to develop.

    It's not needed, I just like a bit of the numbing and it's in my pepper
    mill. Pepper mill is black, pink and sichuan. Just a mix I found I
    liked. Recipe... I'd need to measure my hands for you.
