    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Chicken Dopiazza (Indian Chicken Curry)
    Categories: D/g, Chicken, Indian, Boat, Crockpot
    Yield: 4 servings

    1 1/2 lb Chicken meat
    2 md Onions, thinly sliced
    2 tb Peanut oil
    1/4 ts Garlic powder
    1 tb Coriander seeds
    1 tb Ground cumin
    1/2 ts Ground turmeric
    1 ts Ground ginger
    1 tb Chili powder
    1 ts Black pepper
    2 tb Hot Madras Powder
    1/2 ts Salt
    1 ts Tomato paste
    1 cn 14 oz Tomatoes (undrained)

    Partially cook chicken, Cut in large bite size pieces.

    Fry onions in oil in a large pan until they are golden brown.

    Mix the garlic with the spices and a little pepper. Add the spice
    mixture to the pan, fry spices with onions for 1 minute.

    Add chicken and stir together for 1 minute.

    Add tomatoes, break up solid tomatoes with fork to small size
    pieces.

    ((our sufficient water in pan to cover the meat.)) DO NOT ADD WATER
    Bring to boil, cover and slowly simmer for 45 minutes then uncover and
    cook slowly for 60 minutes or until meat is fork tender Stir
    occasionally to prevent sticking.

    Serves 4

    Serve with Turmeric Rice or Regular Rice

    CROCKPOT VERSION

    Using 4 quart Crockpot

    Using above recipe: Slice onions and place in crockpot. Measure
    spices out and mix, place on top of onions and mix well.

    3 boneless breasts, partially frozen. Cut into 1 1/2 inch or so
    cubes. Place cubes of chicken on top of onions, mix together well.

    Pour canned tomatoes over mixture, the mix well. (DO NOT ADD WATER
    MENTIONED IN RECIPE)

    Cook for 5 hours on low.

    To thicken sauce combine 1 tb cornstartch with 2 tb cold water, 1
    teaspoon tomato paste stir into sauce in crockpot. Cover and keep on
    Low for another 30 minutes.

    Turned out just fine.

    1 1/2 quart crockpot.

    Use one large chicken breast, one onion sliced, and use rest of above
    recipe as typed. Cook on low for 4 1/2 hours, mix in 2 Tb potato buds
    mixed with 4 Tb water. Continue cooking for another 1/2 hour.

    I have an app on my smarty-pants phone which allows me to plug in the
    USDA establishment number on "house brand" items to see which major or specialty maker produced the item. Hy-Vee's soups (those I have checked
    ar from Campbell's. ALDI's chilli is from Chilli Man (Faribault Foods), Schnuk's diced tomatoes w/green chilies are done for them by Del Monte.

    And generally at about 75% ot the price of the identical major label
    product. It's a handy little curiosity satisfier.

    I know you guys only use the basic cell phone - but you can also look
    up the numbers at home from your confuser. This URL:

    FSIS site where you can plug in the number and be enlightened.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Wegmans Wellington
    Categories: Beef, Pastry, Mushrooms
    Yield: 8 Servings

    8 (6 oz ea) beef tenderloin
    - filets
    Salt & pepper
    Wegmans Pan Searing Flour
    1 tb Olive oil
    16 oz Pkg Puff pastry; thawed
    All-purpose flour
    1 c Mushroom duxelles *
    3 1/2 oz (1/2 pkg) Les Trois Petits
    - Cochons Pate w/Mushrooms
    - in 8 slices
    1 lg Egg
    1 tb Water

    * Separate recipe

    Season with salt and pepper and dust beef with pan-searing
    flour. Heat oil in pan on MEDIUM-HIGH until oil faintly
    smokes.

    Add beef filet. Sear 1-2 min each side. Remove from pan;
    refrigerate minimum 4 hours (to overnight). Repeat with
    all filets.

    Roll puff pastry on lightly floured work surface to
    14" x 20". Cut into 8 equal pieces (about 7" x 5").

    Spread each filet with even portion of mushroom duxelles.
    Top each with pate slice.

    Center filets, pate/duxelles-side down on pastry squares.
    Whisk together egg and 1 Tbsp water in small bowl to make
    egg wash. Brush egg wash along outside exposed edges of
    pastry. Bring pastry corners toward center; mold dough to
    seal tenderloin completely. Place beef pastries
    (Wellingtons) seam-side down on parchment-covered baking
    sheet.

    Brush tops and sides thoroughly with remaining egg wash.
    Score tops very lightly in crisscross pattern; refrigerate
    two hours.

    Sett oven @ 400┬║F/205┬║C. Bake Wellingtons 25 min until
    internal temp of beef reaches 130┬║F/55┬║C for Medium.
    (Check by inserting thermometer halfway into thickest
    part of beef.) Rest 10-15 min before serving.

    Serve with Red Wine Sauce with Truffle Butter.

    Chef Tip(s): If you prefer well-done, bake until internal
    temp reaches 145┬║F/63┬║C.

    Always work with cold puff pastry.

    Serves 8

    It was good for me when I needed it but now I can walk the aisles.
    Sometimes something on a top shelf will require my asking for help in
    getting it down; help is usually available from another shopper or store personnel.

    We got home from our western trip earlier this afternoon. Most of the
    time, when we needed a loaf of bread or whatever, we got it at Wal-Mart,
    also spending the night in their parking lot. While we were in UT
    visiting our older daughter, we shopped at Harmon's, very similar to
    Wegman's in quality. I understand it, like Wegman's, is a family owned
    chain.

    Categories: Chinese, Condiment
    Yield: 2 Servings

    MMMMM-----------------------SEE NOTE BELOW----------------------------
    4 ts Soy sauce
    2 ts Sherry
    1 ts Sugar
    1 Clove garlic, chopped
    Slivers of ginger and green
    Onion
    1/8 ts Of crushed chili peppers

    NOTE: Can cut this amount in half for one person - would dip 6
    potstickers if recipe is cut in half


    Mix all ingredients. Let sit for 30 minutes. Serve.

    Hi Dale,

    We got home from our western trip earlier this afternoon.

    Glad to have you back here. Hope that this trip did not have any incidents like you have had on some previous trips.

    A couple of incidents, but nothing like the accident in 2016. We blew
    the passenger side tire of the camper on I-80 (same road as the 2016
    accident) about 20 miles into Utah. It took the fender off the camper;
    UDOT recovered it and disposed of it for us as it was too mangled to be useable. Steve got to the (wide) shoulder without any problem where he
    changed out the tire, bought 2 new ones the next day.

    After leaving our daughter & family, we headed south to AZ. We wanted to
    stop at Natural Bridges Monument so, after we got off I-15, we headed
    over the mountain to I-70. At one point Steve wanted to pull off the
    road; we thought the road and pull off spot were fairly level with each
    other. Turned out not to be so; the frame of the camper bent somewhat
    (getting it looked at tomorrow) but we could still tow it. We had cold
    weather (UT, glad we'd packed some long sleeve shirts & jackets), hot
    weather (AZ, NM & TX), rain (several places) and hail (Grand Island,
    NE).

    Besides the Natural Bridges Monument, we saw the 4 Corners (where AZ,
    NM, CO and UT come together), part of the Heard (Native American) museum
    in Phoenix and Biosphere 2. Got up to Carlsbad Caverns too late to tour
    them but had a good look around. Nothing really memorable for meals but
    did have a good smoked (by our son in law) beef brisket after our
    grandson's high school graduation.

    Looks good. One thing we did verify on this trip. Younger daughter said
    that her boys like Panda Express so we got take out from them one night.
    Part of what we got was an egg roll each--they are not worth repeating.
    The rest of the meal (I had a beef/pepper stir fry) was better, but not
    by much. Our local Chinese take out place is much (!!!) better.
