Title: Chicken Dracula
Categories: Poultry, Herbs, Citrus, Sauces
Yield: 6 servings
4 lb Roasting chicken
2 tb Butter
1 ts Thyme leaves
1 ts Sweet paprika
2 ts Oil; (sunflower preferred)
1/2 ts Salt
1/4 ts Ground pepper
3 cl Garlic; peeled, minced
1 Shallot; peeled, minced
1 Lemon; quartered
MMMMM-----------------------MUJDEI SAUCE-----------------------------
Crushed garlic cloves
Lemon juice
Salt
Water
Sunflower oil (opt)
Mujdei (muz'dej) Sauce ingredients are to taste.
Set oven @ 350ºF/175ºC.
Combine butter, thyme, paprika, oil, salt, pepper,
minced garlic and shallot
Rub mixture over the skin of the chicken.
Tie legs together with kitchen twine and place chicken
breast side up on a rack in a roasting pan.
Put the quartered lemon inside cavity of chicken.
Roast @ 350ºF/175ºC for 1 hour.
Increase oven temperature to 450ºF/232ºC and roast for
15 minutes longer
Let cool for 10 minutes before carving
