    Title: Blue Jean's Super Salad w/Ginger-Citrus Dressing
    Categories: Salad, Greens, Herbs, Vegetables, Fruits
    Yield: 1 Serving

    1 c Romaine lettuce; bite-size
    - pieces
    1 c Spinach; bite-size pieces
    1/2 c Cauliflower pieces
    1/2 c Red onion; sliced
    1/2 c Red cabbage; shredded
    1/2 c Chickpeas; drained, rinsed
    1 Orange; peeled, sliced or in
    - chunks
    1/2 c Strawberries; sliced
    2 tb Dry-roasted unsalted peanuts
    1/4 c Crumbled blue cheese

    MMMMM--------------------------DRESSING-------------------------------
    1/2 c Orange juice
    2 tb Rice or white vinegar
    2 tb Olive oil
    2 cl Garlic; crushed
    1 ts Soy sauce
    1 ts Grated fresh ginger
    3/4 ts Ground cumin

    Toss salad ingredients in a large bowl with 1/4 cup
    dressing. Serve.

    Title: Dudley Do-Right's Meatball In Every Bite Lasagna
    Categories: Beef, Pasta, Cheese, Sauces, Herbs
    Yield: 6 servings

    1 lb Extra-lean ground beef
    Worcestershire sauce
    Soy sauce
    Pepper & seasoned salt
    Garlic powder
    Olive oil
    45 oz (3 cans) tomato sauce
    Italian seasoning mix
    12 oz Box lasagna noodles
    1 lb Ricotta cheese
    1 lb Mozzarella cheese
    1 c Parmesan cheese

    Season ground beef with Worcestershire sauce, soy sauce,
    pepper, seasoned salt, and garlic to taste. Mix
    thoroughly. Roll into marble-size meatballs.

    Brown in olive oil. Add three cans of tomato sauce and
    Italian seasonings. Stir until it simmers, then remove
    from stove and strain out the meatballs.

    Boil lasagna pasta in salt water (with some olive oil to
    prevent sticking). Cover bottom of lasagna pan with
    tomato sauce and line bottom with three strips of
    lasagna. Dot with spoonfuls of ricotta, slivers of
    mozzarella and a little Parmesan.

    Spread half the sauce and add all the meatballs evenly.
    Repeat with another layer of lasagna, sauce and cheese.

    Bake 45 minutes @ 325┬║F/165┬║C.
