    There are several resistant Asian species and new cultivars and hybrids

    I think Connecticut was scared off elms for all time.

    That makes no sense.

    Dutch Elm disease.

    I think you're missing my point. The Asian elm species and the
    hybrids are immune to it.

    It has Elm in the name. Some folks would go for it, but ancestral memory is strong. Besides, they wouldn't be "the real thing".

    And some like Tucker Carlson would whine if you hung them with a new
    rope. Bv)=

    Title: Tucker Surprise Beef Jerky
    Categories: Five, Beef, Sauces, Chilies, Preserving
    Yield: 1 Batch

    1/4 c Water
    1/4 c Cayenne pepper
    1 c Soy sauce (Kikkoman)
    3 lb Rump roast; (approx)
    4 oz Liquid smoke; mesquite or
    - hickory

    Go to the butcher and have them slice a 3 lb rump roast
    into slices as thin as bacon (It sometimes takes a while
    to convince them that you really want it as thin as bacon)
    put soy sauce and mesquite smoke in a gallon size ziplock
    bag. if the smoke came in a 4 oz bottle, use the water to
    rinse the bottle, pour water into bag. Add pepper.

    Close bag and let sit for a couple of hours. Trim all fat
    from the beef. Add beef to the mixture. Let sit for 5 or
    10 minutes (I've not had any trouble if left overnight)

    Remove meat from bag one or two at a time, and lay on
    trays from dehydrator (I've never made it without a
    dehydrator). Put trays in dehydrator, opening vents to
    about half.

    Title: Statistical Lamb Barbacoa
    Categories: Lamb/mutton, Chilies, Herbs, Vegetables
    Yield: 6 Servings

    6 Ancho chilies; stemmed,
    - seeded
    3 Guajillo chilies; stemmed,
    - seeded
    3 lb Boneless lamb shoulder
    Salt
    10 cl Garlic
    1 c Brewed coffee
    1/2 c Water
    1/2 ts Ground cinnamon
    1 ts Dried oregano
    1 ts Ground cumin
    1 tb Agave nectar
    1 sm Yellow onion; in slivers
    1 Carrot; peeled, in rounds
    Tortillas; for serving
    Cilantro; for serving
    Diced onions; for serving
    Salsa; for serving

    Is there a reason why we Texans donΓÇÖt eat much lamb?
    ItΓÇÖs tender, itΓÇÖs flavorful, itΓÇÖs not too expensive and
    yet you seldom see it. Heck, I even heard a statistic
    that said we eat less than a half a pound of lamb a
    year.

    Here is my take on lamb, and easy lamb barbacoa. It
    makes for wonderful tacos, tostadas or just served on
    its own.

    Toast the ancho and guajillo chiles in a dry cast iron
    skillet on medium heat for a few minutes on each side
    and then turn off the heat and fill the skillet with
    water. Let the chiles soak for 20 minutes or until soft.

    Cut the lamb into 3" cubes and rub the meat with salt.

    Drain the chiles from the soaking water, rinse, then
    place in a blender. Add to the blender the garlic, the
    coffee, the water, the cinnamon, the oregano, the cumin,
    and the agave nectar. Puree until smooth.

    Coat the lamb with the chile puree, and let it marinate
    covered in the refrigerator for 4 hours.

    Set the oven @ 250┬║F/120┬║C.

    In a roasting pan, coat the bottom with some of the
    marinade. Place the onions and carrots on top of the
    marinade and then top this with the lamb.

    Tightly cover the pan with foil, and then cook in the
    oven covered for 4 hours or until fork tender.

    Shred meat with forks and serve in tortillas with
    cilantro, onions and salsa.

    get hit with five more things that need doing or three more distractions and.... Dead last is better than dead, I suppose.

    Yield: 6 Servings

    1/2 c Vegetable oil
    1/4 c White sugar
    1/4 c White vinegar
    1/2 ts Salt
    1 ts Salt-free herb & spice blend
    1/4 ts Ground black pepper
    1 1/2 Heads iceberg lettuce; torn
    - in bite-sized pieces
    1 lb Chopped, cooked chicken meat
    5 oz Can chow mein noodles
    2 1/4 oz Pkg blanched, slivered
    - almonds
    1/4 c Sesame seeds; toasted
    - lightly
    4 Green onions; chopped
    2 ts Poppy seeds

    In small bowl, whisk together the oil, sugar, vinegar,
    salt, seasoning blend, and pepper. Set aside.

    In a large bowl, combine the lettuce, chicken, chow mein
    noodles, almonds, sesame seeds, green onions, and poppy
    seeds. Toss to blend. Pour salad dressing over the salad
    just before serving.

    Title: Yellow Corn Bread (from the Quaker box)
    Categories: Quick bread
    Yield: 9 Servings

    1 c Corn meal
    1 c Flour
    1/4 c Sugar
    4 ts Baking powder
    1/2 ts Salt
    1 c Milk
    1 Egg
    1/4 c Shortening
    (I used peanut oil)

    Combine corn meal, flour, sugar, baking powder and salt. Add milk,
    egg, and shortening. Beat until fairly smooth, about 1 minute. Turn
    batter into a greased 8-inch baking pan, and bake at 425 for 20 to 25
    minutes.

    Batter can also be used for muffins or corn sticks. Bake about 15 or
    20 minutes.

    Quaker Oats - This is the recipe that used to be on their corn meal
    boxes until they suddenly decided to change it (for the worse, IMO)
    in the 1990's.
