    Title: Spiced Honey Almonds/variations
    Categories: Snack, Tested, Easy, Xmas
    Yield: 3 Cups

    MMMMM------------------------HONEY/SPICE-----------------------------
    1/4 c Honey
    3/4 ts Crushed red pepper flakes
    3 c Whole almonds
    3 tb Sugar
    1 ts Salt
    1/2 ts Chili powder

    MMMMM------------------------SPICED HONEY-----------------------------
    1/4 c Honey
    3 c Whole almonds
    3/4 tb Red pepper flakes
    1 tb Chili powder
    1/4 ts Cumin
    3 tb White sugar
    1 ts Salt

    MMMMM---------------------INDIAN HONEY/SPICE--------------------------
    1/4 c Honey
    1 c Whole almonds
    1 c Pecans
    1 c Dry roasted peanuts
    3 tb White sugar
    1 1/2 ts Sambar powder
    1/2 ts Hot madras curry powder
    1 ts Salt

    For all versions:

    Preheat oven to 325 (convection will show 300)

    In a LARGE bowl combine sugar, salt, and the other spices (follow
    above ingred. for your recipe-no red pepper flakes in the Indian
    version. Mix well. Set aside.

    Warm honey and crushed red pepper flakes (if in that recipe) over
    medium heat for one minute. For Indian verion, just warm honey.
    Stir almonds into the frypan. Make sure all of the nuts are equally
    covered in honey. Remove from heat and spread almonds (or mixture of
    nuts) in a single layer on to a teflon alum. foil wrapped pan. Bake
    for 18 minutes, remove from oven and let cool for two minutes.
    (Mixture is still slightly sticky)

    Using spatula place the nuts into the bowl with the sugar, etc and
    toss carefully to make sure all of the nuts are getting a coating.

    Remove the coated nuts and place on a parchment lined cookie sheet
    until the nuts are cooled.

    I vaccum seal in jars to keep freshness, but can just be placed into
    any container for short term use.

    Tested for Xmas 2015. Labled the flavor of each jar and made a cloth
    covering for the mason jar and tied with ribbon.

    Fun gift. You have to know the hotness level of the people that
    will get this as part of a xmas gift.

    Add more spices to meet your own levels.

    Recipe should work on any other nuts.

    Title: Ciopino (Southern Pacific Railroad)
    Categories: Seafood, Stews, Shellfish, Vegetables
    Yield: 4 Servings

    12 Clams in the shell
    1 lg Crab; eg a Dungeness
    1 md Rock cod
    1 c Olive oil
    1 c Onions; minced
    1 cl Garlic; crushed
    1 qt Tomatoes; passed through
    - strainer

    This simple Ciopino was served on the Southern Pacific.

    Fry onions in oil. Add garlic and tomatoes, and bring to
    boil. Put clams well-washed into saucepan. Place over it
    the crab, cleaned, broken apart and cracked. Cut cod
    across bone into meat, covering with tomato sauce. Cover
    and cook slowly for approximately 25 minutes.

    Serves 4

    Title: Mexican Noodles
    Categories: Beef, D/g, Casserole, Boat
    Yield: 4 Lg. svgs

    8 oz Noodles, med; uncooked
    1 lb Beef, ground or turkey
    1 c Onion; chopped
    4 oz Can chopped green chilies
    -(undrained)
    16 oz Can tomato sauce
    1 sm Can cream corn
    1/2 c Salsa (desired hotness)
    1 ts Cumin
    1 ts Celery seed
    1 tb Chili powder (or to taste
    8 oz Cheese, cheddar; or more

    In large mixing bowl, combine green chilies, tomato sauce, creamed
    corn, salsa, and all of the spices. Boil noodles according to package
    directions (do not over cook), drain and place in the mixing bowl.
    Stir to combine the noodles and sauce mixture. Brown meat and chopped
    onion being sure to drain off any oil. Combine meat mixture with the
    noodles. Mix well. Pour mixture into flat casserole, approximately.
    9 x 13.

    Cover and refrigerate up to 12 hours.

    When ready to bake, remove cover, sprinkle grated cheese over top and
    bake in preheated 400 oven for 20 mins., then set oven to 450 for
    another 10 mins. or until cheese is slightly brown.

    Serves 4 - 6 depending on appetite. Reheats well in microwave.

    ** If transporting this hot, cover pan with foil and poke vent holes.

    Good with corn muffins, salad
    School Functions

    Can cut recipe in half and use 8 inch square pan.

    Use half beef, noodles, tomato sauce, onion and salsa but use original
    amount of spices, creamed corn and canned chilies. Cut cheese down as
    well - to your own taste.

    Just the other day I saw a "track speeder" with traier zipping along
    with a crew of six people on the Norfolk Southern right-of-way. I was
    somewhat taken aback as speeders (AKA section car, railway motor car, putt-putt, track-maintenance car, crew car, jigger, trike, quad,
    trolley, or inspection car) have been replace, for the most part, by
    pickup trucks with retractable flanged wheels allowing their use on
    both roads or rails.

    Title: Gandy Dancer Cake

    Yield: 10 servings

    3 tb Butter
    1 c Granulated sugar
    1 lg Egg
    1/2 ts Vanilla
    1 c A-P flour
    1/2 ts Baking soda
    1/2 ts Salt
    1/2 ts Cinnamon
    1/2 ts Nutmeg
    1 3/4 c Diced, pared apples
    1/4 c Walnuts

    MMMMM----------------------CARAMEL SAUCE-----------------------------
    1/2 c Brown sugar
    1/4 c Butter
    1/4 c Cream
    1/2 ts Vanilla

    Set the oven @ 350┬║F/175┬║C.

    Grease the bottom of a 9" springform pan Set aside.

    Cream the butter and sugar together. Add the egg and
    vanilla and beat well.

    Whisk flour, baking soda, salt, cinnamon and nutmeg
    together in another bowl.

    Make a well in the dry ingredients. Add wet ingredients
    to the mix.

    Add the apples and nuts to the batter. Scrape into the
    prepared pan. Bake for 20 minutes or until top springs
    back when touched. Cool 5 minutes before removing the
    ring from the pan.

    Top with the caramelThe recipe.

    MAKE THE CARAMEL SAUCE: Blend brown sugar, butter and
    cream together in a saucepan. Cook over medium heat
    until it boils and thickens, stirring frequently. With
    a cup of water and a pastry brush, brush water onto
    the sides of the pan a couple times to wash any
    un-dissolved sugar crystals back into the sauce.

    Add the vanilla.

    Slowly pour the warm sauce over the warm cake letting
    the sauce soak into the cake.

    Serve with caramel whipped cream.

    I wouldn't be surprised; I see enough of them on the road.

    The problem with electric vehicles is that towing really limits their
    range. A truck that can go 200 miles on a charge can only go 100 miles
    while towing. Figuring in time to recharge, it would take us at least 3
    weeks to get out to see our daughters and grandkids. Steve is still
    considering diesel but hasn't made up his mind yet--depends on what's
    available in the next few months.

    True, I wouldn't want to get something that I didn't know was hot/spicy.

    1 lg Whole rabbit
    1 qt Water
    2 tb Cornstarch
    6 Sliced carrots

    2 tb Chilled shortening or lard

    * the less you use, the better the dumplings seem to

    Boil the rabbit in the water until its meat is tender,
    then remove it from the pot and bone it. Put the meat
    into a large kettle, add 2 cups of the broth in which
    the rabbit was cooked, bring to a boil, and add a
    thickening sauce that you’ve made by stirring the
    cornstarch into 1/4 cup of the remaining rabbit broth.
    Allow the kettle’s contents to boil for another minute,
    then reduce the heat. Add all the remaining ingredients.

    DUMPLINGS: Sift the dry ingredients together into a
    bowl, then cut in the shortening with a pastry blender
    until the mixture resembles coarse meal. Add the milk
    all at once, stir lightly just until the dough holds
    together, and then drop rounded tablespoonfuls of the
    mixture on top of the gently bubbling stew. With the
    heat adjusted so that the liquid just simmers, let the
    dumplings cook - uncovered - for 10 minutes, then cover
    and let them cook 10 minutes longer, or until the steam
    has fluffed them up nicely.

    If you need to thicken the stew, do so after removing
    the dumplings.

    Serve homemade tomato relish and cranberry sauce on the
    side, to give your hearty meal just the proper finishing
    touch.

    Title: Taco Truck Tacos
    Categories: Pork, Tortillas, Corn, Chilies
    Yield: 4 Servings

    3/4 lb Cooked pork
    Juice of 2 lemons
    2 Onions
    4 Garlic cloves
    3 tb Chili powder
    2 tb Salt
    1 tb Mexican oregano
    Water
    8 Corn tortillas
    1 bn Cilantro

    Cut 1 onion into large pieces. Put cut-up onion, pork, lemon
    juice, garlic, chili powder, salt and oregano in slow cooker with
    water to cover. Cook on low heat 10 or on high about 4 hours.
    Remove pork from slow cooker and shred. Chop remaining onion and
    about half of cilantro. Heat tortillas over flame of gas burner or
    in microwave. Fill each tortilla with shredded pork and sprinkle
    with chopped onion and cilantro. Yields 8 tacos.
