A new northern chef

I used to marvel that Yellowknife could attract and keep Chef Pierre
Lepage after his team won gold in the Culinary Olympics but the
Northwest Territories has another European trained, international
chef living and operating in an even more remote community.
Hicheme Ouerghi was born in Tunisia and trained in France and Italy
He attended the prestigious Alain Ducasse culinary school in Paris
and then studied Italian cooking in Rome and Naples. He has worked
at hotels and restaurants in France, Italy, Dubai, Mexico and
southern Canada, He is now the cook and hotel manager at
Ulukhaktok's Arctic Char Inn, an 8 room place owned by Arctic
Co-Operatives Limited. He was drawn there out of a sense of
adventure and decided he liked it so he stayed.
His menu is fairly basic as he has supply and budget constraints: he
makes quesadillas, wraps and poutine there, but nothing like he did
in Dubai or Paris.
Ulukhaktok, formally know as Holman, is a tiny Inuvialuit hamlet
of 470 people located on Victoria Island in the high arctic sitting
at latitude 71 degrees. It is the second most remote community in the
NWT. Hunting, trapping, and fishing are still major sources of
income there. The name means "place where ulu parts are found" as
there are rock outcrops there that contained native copper.
It has another claim to fame as well: it is home to the world's most
northerly golf course.
