Title: Make Ahead Breakfast Enchiladas
Yeah that sounds good! Cutting up a peameal bacon in a few mins
to go with scrambled eggs.
I prefer streaky bacon .... but, that's me. Enough of that and I don't
need to reach for the salt shaker. Bv)=
Here's another breakfast enchilada - I haven't tried this one - yet.

Title: St. Augustine Breakfast Enchiladas
Categories: Breads, Pork, Cheese, Vegetables, Chilies
Yield: 10 Servings
10 (8") Flour tortillas
2 c Diced ham
2 c Shredded cheddar cheese
3/4 c Chopped green onions
2 c Half & half
6 lg Eggs
1/2 ts Dry mustard
1/2 ts Salt
1/4 ts Cayenne pepper
Salsa & sour cream
Line the center of tortilla with ham, green onion and 2
tsp. cheese .
Reserve 3/4 C of cheese for later .
Roll up and place seam side down in greased 13" x 9"
pan.
Whisk together the remaining ingredients.
Pour evenly over tortillas, Cover and refrigerate
overnight.
Remove from refrigerator, let stand 30 min at room
temperature.
Bake (covered) @ 350┬║F/175┬║C for 20 minutes, remove
cover, bake another 15 minutes.
Sprinkle with reserved cheese and bake 3-5 minutes until
cheese melts.
Let stand 10 minutes before serving .
Garnish with Salsa and Sour Cream.
